One of the main reasons some people get almost addicted to making money is that it affords them frequent opportunities to tell other people what to do. Its their money, they can say whatever they want.
But as a chef, I'm sure you know this.
What you might be more interested in is something like this ...
"Tell me, sir, are you more interested in me applying my cullinary skills to preserving the boundaries of the existing menu -OR- using my skills to summarize the positive traits of the existing menu and then make suggestions that might maintain the style, but add new flavors and subtleties to, what you've already built? I don't want to change your menu or your ambience - I know you are concerned about these things and how they effect the niche you've carved out for yourself - but I think I can add and enhance what you have here and would like to work with you to do that."
OR ...
"Ok, I'll do it just as you asked. But, I have a question: do you know where the closest place is where I can buy a semi-automatic weapon?"
