I heard of this term about cemetery. Does it mean a cemetery plot for one person, or depth of a plot?

Both. Single depth = single layer. In a cemetery this would mean only one body per grave, thereby denoting how deep the grave should be for a single coffin. The grave would have to be dug deeper for there to be room for extra coffins to go on top, with the uppermost being six feet under.
