Minestrone Ravioli Stew
Ingredients
• 1 can (14.5 oz.) chicken or vegetable broth
• 1 pkg. (9 oz.) refrigerated cheese-filled ravioli
• 2 cans (14.5 oz. each) CONTADINA® Recipe Ready Diced Tomatoes with Sautéed Onions
• 1 can (15 oz.) cannellini*, great northern or navy beans, rinsed and drained
• 1/8 tsp. crushed red pepper
• 2 cups diced cooked chicken
• 2 cups torn fresh spinach

Directions
1. Bring broth and ½ cup water to boil in large saucepan. Add ravioli. Return to boil; reduce heat and simmer, covered, 5 minutes.
2. Stir in undrained tomatoes, beans and pepper. Return to boil; reduce heat and simmer, covered, 5 minutes.
3. Add chicken; heat through. Stir in spinach until wilted. Sprinkle with shredded Parmesan cheese, if desired.

Prep Time: 10 min
Cook Time: 20 min
Servings: 4 to 6

Basically minestrone stew is tomato soup with vegetables, pasta and herbs added. Every region of Italy has its own version. My favourite additions to the tomato soup base are peas, butter beans, cubed potato, carrot, shredded cabbage, alphabet pasta, basil, onion and garlic.
