I guess I need to be more specific. A real southern recipe. From a southern lady's mother's grandmother.

Real southern fried chicken is not batter, it's floured.

Soak your chicken in buttermilk for 1-2 hours (buttermilk helps to break down the meat fibers) e.i. tender chicken.

Flour mixture:

-all purpose flour
-salt
-black pepper
-garlic "powder" not salt
-onion powder
-paprika
-cayenne

One more thing, if you what "real" southern fried chicken it's cook in cast iron skillet with "lard" on medium/high heat. After that you drain the fat of and make your gravey.

Southern Fried Chicken

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Southern Fried Chicken:
4 eggs
1/3 cup water
1 cup hot red pepper sauce
2 cups self-rising flour
1 teaspoon pepper
House Seasoning
2 1/2-pound chicken, cut into pieces
Oil, for frying, preferably peanut oil

To make the House Seasoning, mix ingredients together and store in an airtight container for up to 6 months.

In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.

INGREDIENTS:
4 pounds chicken pieces
1 1/2 cups milk
2 large eggs
2 1/2 cups all-purpose flour
2 tablespoons salt
2 teaspoons pepper
3 cups vegetable oil
salt

PREPARATION:
Rinse chicken; pat dry and then set aside.
Combine milk and eggs in a bowl; whisk to blend well.

In a large heavy-duty resealable plastic food storage bag, combine the flour, salt, and pepper.

Dip a chicken piece in the milk mixture; let excess drip off into bowl. Put a few chicken pieces in the food storage bag and shake lightly to coat thoroughly. Remove to a plate and repeat with remaining chicken pieces.

Heat oil to 350°. Fry chicken, a few pieces at a time, for about 10 minutes on each side, or until golden brown and cooked through. Chicken breasts will take a little less time than other pieces. Pierce with a fork to see if juices run clear to check for doneness. With a slotted spoon, move to paper towels to drain; sprinkle with salt.

Personally, I do what s.wade suggested, but in frying, I add butter to the oil - a lot. It gives the chicken a unique, delicious flavor. (I don't use herbs/spices other than salt & pepper in this dish.)

I think typically (having lived in the south almost my whole life) fried chicken is not 'battered'. How I learned to make it was with a simple flour dredge.
Just take some white flour and put it in a shallow dish of some sort. Add salt and pepper (or other herbs/spices to your taste) and make sure it is well mixed. Take the chicken and coat thoroughly with flour. You can alternate with a shallow dish of milk to thicken the coating as you like. Drop it in a frying pan with half an inch or so of oil, cover and cook. Turn it when you need to.

Clara- I almost put it in there myself, but I really like to cook in butter flavored Crisco, to me it's better than butter for the flavor.

Mix your batter self rising flour and all purpose flour half and half. Season to taste Lawry's seasoning salt a lil garlic, salt, pepper in the flour mixture. Lightly season the chicken make sure chicken is clean and wet, batter with flour mixture then batter in savory herbs breads crumbs for extre crispy chicken!
