cut the potato in half salt and pepper to taste place a slice of bacon and slice of onion in the middle wrap in foil place in oven or on grill serve with your favorite topping (mine is sour cream butter and chives)

2/3 cup minced onion
1/3 cup minced green bell pepper
1/3 to 1/2 cup olive or canola oil
4 Idaho potatoes, peeled and diced
Salt and freshly ground pepper
In a large skillet cook the onion,and green pepper in 2 tablespoons of the oil over moderate heat, stirring occasionally, until vegetables are softened. Transfer vegetables to a bowl. In the skillet heat the remaining oil over moderately high heat until hot and add the potatoes. Saute, stirring occasionally, for 15 to 20 minutes, or until tender and crisp. Stir in the vegetable mixture and correct seasoning. Heat over moderately low heat until hot and serve.

My family has a couple of favorites!
1: In a foil pouch add sliced potatoes, sliced onion, garlic, green pepper, salt and pepper. Take two tablespoons of butter and cut into pieces and distribute in pouch. Close the foil pouch and place them on a medium grill about 10-15 mins before you start the main corse. Remove to warmer while cooking meat.
You can also place the foil pouches in the oven for about 20 - 30 mins. (350 F)
2: Cube potatoes (and this is really good with both white or sweet potatoes) For every 3 cups of potatoes place in a plastic bag. Add in 1/4 cup of oil and one envelope of Onion soup mix. Dump into a 9x13 cake pan, laying them out in a single layer. Cook them for about thirty minutes or until tender. (350 F)
One more:
3:This is for either white or sweet potatoes. Cut into fries. Place on a foil lined cookie sheet in a single layer. Brush with melted butter. The white potatoes you can sprinkle with garlic salt or reg salt or if you have a favorite seasoning, like all spice (my sisters favorite) adn bake them for 30-40 mins or until tender (350 F) The sweet potatoes I brush with the butter and then salt and cook them 20 to 30 mins at 350 F. Sweet potatoes, even though they are harder to cut up cook faster.
*Sweet potatoes: we usually buy yams because they are not as stringy.

give you three try this parboil quartered potatoes and then roll in butter and coat with seasoned bread crumbs and then bake for a half hour at 350 then test for tenderness thats french baked and then try this microvave several like three bakers for 22 minutes and then check use them for mashed after removing from the skins the taste is deep because they where sealed in as they cooked also theres bake them in an oven for 45 minutes till tender then remove the potatoe and add some garlic or cheese or bacon and then put the halves stuffed back in the oven till wrm and then serve

** Potatoes Gorgonzola **
They are delicious served with roasted or grilled meats, adding just a touch of elegance to an ordinary meal of meat and potatoes.
2 Pounds Yukon Gold Potatoes
1 Cup Gorgonzola Cheese, Broke Into Pieces
1/2 Cup Heavy Cream
Salt And Pepper
2 Teaspoons Fresh, Chopped Herb Of Choice (Oregano, Sage, Parsley And Rosemary Are Good Choices)
Peel the potatoes, and cut into quarters. Cook the potatoes in a pot of boiling, salted water until fork tender. Drain the potatoes, and put them through a potato ricer and then back into the pot. Add the cheese, cream, salt and pepper and chopped herbs. Mix well. Serve immediately, or keep warm in a double boiler over simmering water.

** SCALLOPED NEW POTATOES AND LEEKS **
1/4 c. plus 2 T. butter, divided
1/4 c. flour
2 c. half and half
1 T. Dijon mustard
1/4 t. salt
1/4 t. pepper
1 ½ c. thinly sliced leeks
½ c. chopped sweet red pepper (canned pimientos OK)
5 c. thinly sliced new potatoes
2 c. (8 oz.) shredded sharp Cheddar cheese
Garnish: thinly sliced red peppers
1. Melt 1/4 c. butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook, stirring constantly, 1 minute. Gradually stir in half and half, and cook over medium heat, stirring constantly, until thickened and bubbly. Stir in mustard, salt and pepper. Remove pan from heat.
2. Melt remaining 2 T. butter in a large skillet; add leeks and chopped red pepper. Cook, stirring constantly until tender.
3. Spoon ½ c. sauce mixture into a lightly greased 11"x7"x1 ½" baking dish. Layer with half each of potato slices, leek mixture, sauce and Cheddar cheese. Repeat layers.
4. Cover and bake at 350º for 50 minutes. Uncover and bake 25 minutes or until potato slices are tender. Let stand 10 minutes before serving. Garnish, if desired.

make ahead potatoes 6 potates, peeled, boiled, and mashed, 8 oz cream cheese, 8 oz sour cream, 2 tbsp butter, 1 tsp garlic salt, blend all ingred. together, place in greased 9x13 pan cover and bake at 350 degrees for 40 minutes, top with melted butter and parsley(optional)

one of my most recent fav ways to do potatoes is to cut in bite size pieces, toss with a packet of lipton onion soup mix and 1/3cup oil and then either cook on the grill in a foil pkt, or in the oven at 450,for about 30-40 minutes, stirring occas. or turning pkt occas. you can also throw in some chicken, carrots, celery , gr. peppers etc in to make this a one pan meal.

slice very thin,take a can of cheese soup add 1 can of milk and 3/4 tbs of butter back @350 till potatoes are done {very hot be careful}add a lilttle salt/pepper very good>>>

in my house we boil the potatoes then we take the skin off . the next step is to mash it and make it into a ball shape.
If you like if fried you can fry it in the ball shape.
If you like mashed potatoes just add the things you like to it and maybe add salt and black pepper to it. And of corse put butter to it. if you like nice french fries you can boil it then cut them into the size of french fries you like them. them fry them and have ketchup and you have a goooooooooooooooooooooooooood meal there.
