Why is it that Southern Pizza and sub shops do not have green olives as an available ingredient?

Mainly because southern people don't eat green olives.

Same reason that Maine does not carry sweet tea - some areas of the country just don't like some types of foods. It's very sad.

Order a muffalatta, and you'll get green olives. Otherwise, it's only black, baby.
