** Sweet Potato Fluff **
3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)
½ cup sugar
¼ cup melted butter
1 (5 oz.) can evaporated milk
¼ tsp. kosher salt
1 tsp. vanilla
Dash of each: cinnamon, nutmeg, dry orange peel
Topping:
½ cup brown sugar
½ cup chopped pecans
½ cup flour
2 Tbsp. butter
Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.
Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice. Stir in remaining ingredients and pour into a greased casserole dish.
Sprinkle topping on potatoes and bake for 40 minutes.
Serves 8.

** Savory Sweet Potatoes **
3 cups cooked sweet potato (8-10 fresh or 2 [29-oz] cans)
½ stick real butter
3 strips bacon
1 small onion, chopped
1½ cups grated sharp cheddar cheese, divided
Salt and black pepper to taste
Preheat oven to 350ºF. In 9"x13" casserole dish, coarsely mash potatoes and butter with fork. (works best when potatoes are hot.) Fry bacon and drain well, then chop it. In bacon drippings, cook onion until clear. Add bacon pieces, onion, 1 cup cheese, salt, and pepper to potatoes, stirring with fork to combine all. Spread out evenly in pan.
Top with ½ cup cheddar cheese. Bake for 20 minutes.

** Sweet Potato Pie **
1½ cups sugar
3 eggs
1½ cups mashed, sweet potatoes
1 tsp. vanilla extract
1 stick butter, melted
½ cup milk
1 deep dish pie shell, unbaked
Preheat oven to 350ºF. Beat together sugar and eggs. Add potatoes, vanilla, and melted butter. Mix, then add milk. Pour into unbaked pie shell and bake for 1 hour.

**Sweet Potato Cobbler **
1 (29 oz) can sweet potatoes, drained and mashed
6 eggs, room temperature
2 cans sweetened condensed milk
1 package of Spice Cake Mix
1 cup of chopped Pecans, or more to taste
2 sticks of butter
1 cup of brown sugar
Mix: Sweet Potatoes, eggs, brown sugar, cake mix, 1/2 of the pecans, and 1 can of eagle brand.
Melt: One stick of butter in a 9 x 13 pan. Make sure the pan is fully coated with the butter.
Pour: The first mixture into the pan.
Bake: 350ºF for 40-60 minutes.
Melt: The other stick of butter and add the other can of eagle brand and the other half of the pecans, and mix together. Pour this mixture over the top when it comes out of the oven.
Serve warm. Top with cool whip, whipped cream or ice cream.

Makes some awesome sweet potato pies! Or give them to one of those homeless can drives. Lord knows the homeless could use something other than the 100 cans of creamed corn they usually get.

sweet potato souffle is wonderful. so is sweet potato pie. i used canned sweet potatoes to make candied yams. drain them. cut in big bite sizes. put them in a shallow dish sprayed with Pam. sprinkle with a little cinnamon, nutmeg and/or ginger. sprinkle brown or white sugar over them then plop some butter on it. add about 3-4 tablespoons of water to help make a syrup. put in 400 oven for about 30 minutes. great anytime but really good at Thanksgiving with turkey and dressing.

You can definitely make sweet potato pie. You can use the same recipe that you use for pumpkin pie and no one will know the difference. Anything that you use pumpkin for, you can replace with sweet potatoes (or carrots for that matter) like pumpkin cookies, pumpkin cake, etc. I found a good site that has hundreds of recipes that use them.

make a LOT of sweet potato pies. 2 make things easier on urself, just follow betty crocker's pumpkin pie recipe n substitute the pumpkin w/the potatoes. also, i find it nice 2 add a bit of nutmeg, a splash of vanilla, & just a touch of either rum or brandy i the mix. hope that helps! =)

Does every thing come canned these days!?! I didn't know you could get canned sweet potatoe.... sorry i don't know how to cook them either!
