Tropical Coconut Chicken
INGREDIENTS :
4 boneless, skinless chicken breast halves
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
1 large egg -- slightly beaten
1 teaspoon water
1 teaspoon salt
1/2 teaspoon pepper
1 cup firmly packed, flaked coconut
METHOD:
Place chicken between two pieces of wax paper and gently pound to 1/4-inch thickness.
In small bowl, place egg, water, salt and pepper; stir to mix well.
In shallow dish, place coconut.
Dredge chicken, first in egg mixture, then in coconut, pressing to coat well.
In large non-stick frypan, place olive oil and butter over medium heat.
Add chicken and cook

Jamaican Stewed Fish
2 tablespoons canola oil
1 pound halibut, cod or other firm whitefish fillet, cut into 4 serving pieces
1 teaspoon salt (optional)
1/2 teaspoon ground black pepper
1 small onion, cut into rings or chopped
1 small bell pepper, seeded and chopped (or use 1/2 of two different-colored peppers)
4 small plum tomatoes, chopped
1 tablespoon jerk-seasoning powder or rub
In large nonstick skillet, heat oil over medium-high heat.
Season both sides of fish with salt and pepper; add fish
to skillet. Cook until underside browns, about 3 minutes.
Turn fish and remove from pan. Reduce heat. Add onion
and bell pepper to skillet; saute about 3 minutes. Stir in
tomatoes and jerk seasoning. Cover and cook until
tomatoes break down slightly, about 3 minutes. Return
fish to skillet, browned side up; spoon with sauce. Cover
and cook over low heat until fish is done, about 7 minutes.
Serve with brown or white rice or pita bread.
Makes 4 servings.

~Jamaican Beans and Rice~
1 1/4 cups dry kidney beans
1 cup coconut milk
1 sprig fresh thyme
1 teaspoon minced garlic
1/8 cup chopped green onions
1 hot red chile pepper, sliced
2 1/4 cups uncooked brown rice
Combine beans and coconut milk in a large saucepan; cook for 2 hours on low heat.
Stir in thyme, garlic, onions and 3 slices chile pepper; simmer for 7 minutes. Stir in rice and bring to a boil. Reduce heat, cover and simmer for 25 minutes, or until all liquid is absorbed and rice is tender.
Serves 6.
