Here's an easy chicken enchilada recipe:
4 cooked boneless skinless chicken breasts (shredded or chopped)
1 can cream of chicken soup
1 can Campbell's Cheese Soup (pepper jack is pretty tasty)
1 small can diced chiles
8oz. sour cream
flour tortillas
Mix the chicken, diced chiles, cheese soup and half the container of sour cream in skillet/saucepan. Simmer approximately 10-15 minutes.
While that's simmering, mix the remaining sour cream and the cream of chicken soup in a separate bowl.
Add the chicken mixture to the tortillas and roll like an enchilada. Place in flat casserole dish.
Top with sour cream and cream of chicken mixture. Add sharp cheddar or mexican blend cheese to taste. Bake at 400 for 15-20 minutes.

Steak Fajitas!
Cut steak into thin strips.
Cut 1/2 onion into strips or med chunks
1/2 Red pepper
1/2 Green pepper
Cook steak on medium for 10 minutes
Add veggies to pan. Stir fry for 10 minutes
Add packet of taco seasoning and water.
I add some taco sauce or salsa also.
Bring to a boil and reduce and simmer until mixture thickens!
Serve with soft shells or hard shells!
Or make a taco salad!

these are taquitos you can buy roast beef at your deli or if you have left over after cooking one you can use it but take you corn tortilla's warm them in olive oil in a frying pan to soften them drain on paper towels take the beef and wrap in the tortillas pinning them with a toothpick put back into the oil until crisp served with guacamole or sour cream great for parties

~Guacamole~
2 medium avacados, seeded, peeled, and cut up
1/2 small onion, cut up
2 Tbsp. lemon juice
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
In blender container place all ingredients; cover and blend till well combined.
Makes about 1 1/4 cups.
(So easy and much better than storebought.)
