What the first person said, though not just deer. If I remember right they were also used to hunt wild boar. The large jaws were good for grabbing onto the thick hides/necks of the boar's (or hogs) and the deep barrel chest was fairly good for protecting the dogs internal organs should it get hit by a horn.
Mastiff's were also used because of their build as well. The stronger built the dog the better it was at bringing down an animal like a Deer, Stag, Boar etc. although the mastiff was usually used more for protection than hunting.

they were bred to hunt deer.

the nose is set back so they can still breathe whilst pulling down their prey with a mouth ful of blood.
