i need some good dinner ideas. i am so tired of havng the same things everyday. what kind of stuff would you recommend. i love mexican food alot.

Fajitas....that way you can use a combination of different meats and veggies and even tortillas. Also, it makes a great omelet the next morning with the leftovers.

Mexican Meatloaf
Ingredients:

1 pound ground beef
1 cup crushed Doritos
1 egg - beaten
1 envelope taco seasoning
1 1/2 cup shredded colby/jack cheese - divided
1 1/2 cup salsa - divided
1/2 can refried beans
Directions:

Combine first 4 ingredients, 1/2 cup of the cheese, and 1 cup of the salsa.

Form mixture into a loaf and place in a greased loaf pan. Spread refried beans over the top of the meat loaf. Drizzle remaining salsa over top.

Bake in 400 degree F oven for 50 minutes, or until internal temperature reaches 160 degrees. Sprinkle remaining cheese on top. Bake additional 5 minutes to melt the cheese.

Put a pork roast in a slow cooker with your favorite seasonings, about half way through cooking put in a can of coke and some brown sugar. It will soften up the roast and when its done you can pull the meat apart with a fork and add BBQ sauce, if you like, and eat it on a bun. Took this to an athletic banquet pot luck once and I swore I made way too much, but it was the first thing gone!

or Marinade some steak with your favorite marinade, let sit for at least 4 hours, grill the steaks, cut into small pieces and eat on soft tortilla shells with your favorite toppings, sour cream, tomatoes, cheese, whatever!

Slow cooker lasagna is great too. Make your favorite meat sauce put that in slow cooker first, than add broken up lasagna noodles, cheese and continue to layer that until you get to the top and top with cheese. This cooks up in about 4 hours in a slow cooker and is awesome.

Quick taco salad

1 lb hamburger
1 pckt taco seasoning
1 can beans

brown hamburger and drain. Add beans and seasoning. You can omit beans if you don't like them. You can also buy already premade taco meat in the deli area from Old El Paso. They also carry spicy chicken too.

1 bag Doritos or Tortillas
1 bag salad
diced tomatoes
diced green onions
diced jalepenos (again optional)
1 jar salsa or taco sauce
sour cream
Cheese (can't forget the cheez!)

Form a salad bar and let everyone make their own taco salads. Its great if you crunch the tortillas or doritos up.

mexican doesn't have to be tacos and enchilladas all the time :D
how about a Lobster and Tequila theme? You can have a Margarita bar and serve Lobster and tortillas. Have a bunch of different toppings. How about grilling veggies? Use spanish seasoning to add flair.

Try this Tex-Mex salad.
Layer the bottom of a large glass salad bowl with romaine lettuce leaves torn into small pieces. Add one can of black beans, one can of kernel corn, 2 cups of grated cheese, 1/2 cup salsa, 1 cup of Kraft Ranch dressing, then top with broken tortillia chips.
You can add some grilled chicken if you want meat in your salad.....Bon Appetit

enchiladas are super easy and super easy to alter...you can also do everything from scratch or opt to buy things canned for time purposes, i.e. buy pre-made enchilada sauce...

I use flour tortillas and different ingredients depending on how I feel.

Variations:

- black bean, tomato, and corn enchiladas
- tofu enchiladas
- cheese
- chicken (white or red sauce)
- spinach and cheese

tostadas, shrimp or fish tacos, ceviche, enchiladas or enchilada casserole ( layer tortillas, sauce, cheese, and meat if you want like lasagna and bake), homemade pico de gallo or salsa verde, taco salad, quesadillas, carne asada burritos or tacos, the possibilities are endless and easy.
