i like something low fat or fat free, i makeing a portebella mushroom entree

Ricotta comes low or non fat. Check out your local grocer.

Also, you could try - cottage cheese, sour cream, marscapone (for sweet).

I don't think there is an acceptable substitute. Nothing tastes that good. I did like the answer about straining it. It does help and it makes for a better consistancy. Also, the low fat versions are not bad at all.

Ricotta is low fat but you could use tofu instead.

They make low fat ricotta. Might try something soy based...like tofu. Also you could try plain hummus.

Some substitute with cottage cheese.They put in cheese cloth or coffee filter in strainer over night to get excess liquid out.

Low-fat ricotta is available, so you could still use the ricotta.

Tofu is relatively high in protein, low in calories, contains beneficial amounts of iron and has no cholesterol.
Depending on the coagulant used in manufacturing,
high in calcium and magnesium.
Sounds healthy to me...
