I live in Raligh, NC area so have limited access to some 'fancy' Italian ingredients.

Here's a quickie, and a goodie. Make cheese lasagna. Just take a traditional lasagna recipe and substitute all meat with ricotta cheese and a little chopped green pepper if desired. Put that between the layers instead of the meat or italian sausage. And use marinara sauce as a substitute for meat sauce.

Substitute the hamburger with ground chicken or turkey or sausage, or just omit the meat. Cottage cheese is gross in lasagna, so don't use it.

Heres a veggie version for you.

1 large jar of your favorite sauce, or homemade
lasagna noodles, cooked
2 red peppers, sliced
2 green pepper, sliced
1 large zucchini, sliced in half, then cut into half moons
1 large squash, cut the same as above
1 large red or white onion, sliced
3 to 4 cloves garlic, minced
mozzerella cheese
parmesan cheese
olive oil
parsley
salt and pepper
italian seasoning

Cook noodles. Slice your veggies and heat some oil in a pan and add all the veggies, salt and pepper and saute for about 20 minutes, until soft and crisp.

Start layering your lasagna. Add a little sauce to a 9 X 13 pan, and then a layer of noodles, spread some veggies and then some sauce and then cheese. Keep going until you finish on top with cheese. Bake at 350 for 30 minutes or until bubbling hot.

Ricotta, mozzarella (fresh mozzarella, the really soft kind), creamy goat cheese, cream cheese - just about any cheese at all, really, can replace cottage cheese. There are no hard and fast rules (unless perhaps you are trying to be authentically Italian); you can use chicken/turkey(either cut as for stir fry or ground), seafood, or even go meatless with all cheese or cheese and mushroom. White sauce, red sauce, whatever strikes your fancy.

Easiest thing to do is use the no-bake noodles, start with a layer of sauce, cheese, meat/seafood/whatever, noodle, etc. Bake 350 F until cheese on top browns and bubbles.

NOTE: meat, poultry, seafood should be cooked before putting into lasagne

Ok , I can do that.

Precook the noodles maybe 20 minutes in boiling water.

Then some olive oil in a tray or glass pan, whatever you got.
Then one layer of noodles. Some crushed tomatoes, Muir Glen with basil is best but use what you got. Crush some tofu (extra firm) in also, it tastes really really close to cottage cheese and is really good for you too. It really does taste roughly the same to me when its cooked this way. Fresh basil if you have it. fresh parmesan cheese if you have it or whatever you got. Make a few layers like that till the pan is full. Then more cheese on top, cheddar mozzarella and or parmesan so it melts a gooey and good. Cook at 400F for about 40 minutes.

boil enough lasagna noodles for 3 layers in the pan your using.If you don't want to make marinara buy 2 jars of decent sauce. Put enough sauce in the bottom of pan to cover 1 layer of noodles add whatever fillings you want in layers and repeat . I'd Strongly suggest using 1 cup ricotta mix with 1 egg and mozzarella cheese for 1 layer you can put virtually anything edible in the other. cover with noodles and sauce bake at 350 for 40 minutes

Olive Garden Restaurant's Five Cheese Lasagna

CREAM SAUCE:
1/4 cup Butter
1/4 cup Flour
2 cups Milk

CHEESE FILLING:
1/4 cup Sun-dried tomatoes, oil Packed, minced
1 tablespoon Fresh garlic, minced
3-1/2 cups Ricotta cheese
3 Eggs
1 cup Grated Parmesan cheese
1/2 cup Grated Romano cheese
1/2 teaspoon Salt
1 teaspoon Black pepper

OTHER:
4 cups Mozzarella cheese, shredded
1 cup Spinach lasagna noodles or Regular if unavailable
Marinara sauce, as desired
Extra Parmesan cheese Freshly grated

To make sauce melt butter with medium heat in heavy, 1 quart saucepan. Add flour and stir until well-blended; cook until frothy. Add milk, stirring constantly with wire whisk as mixture comes to a simmer. Cook and stir until thickened (3-4 minutes). Chill while mixing other ingredients. Drain and mince tomatoes and garlic. Place other cheese filling ingredients in 3-quart mixing bowl with tomatoes and garlic. Add 1-1/2 cups of cooled cream sauce and mix until well blended. Refrigerate, reserving 1/2-cup for later use.

Cook lasagna noodles according to package directions. Cool under cold water and drain. Place 3 lasagna noodles in a 9x13x2 lightly oiled baking dish, overlapping slightly.

Spread 1-1/2 cups cheese filling over noodles; sprinkle with one cup mozzarella and 1/4-cup fontina cheese. Repeat pasta and cheese layering three more times; top with remaining three lasagna noodles. Spread 1/2-cup of reserved cream sauce over top and cover lightly with foil. Preheat oven to 350 deg F. and bake for 1 hour. Remove from oven and keep warm at least 30 minutes before serving. Serve topped with hot marinara and Parmesan cheese. (Can be refrigerated a day before baking if desired.)

I found a recipe for a VEGETABLE LASAGNA. No meat or cottage cheese. It does however call for tofu and
eggless uncooked lasagna noodles. (vegan recipe)

Use your regular recipe but substitute sweet italian sausage (if you don't see it at the regular supermarket ask somebody behind the meat counter--they are usually very helpful) and substitute ricotta cheese for the cottage cheese.

Substitute slices of eggplant for the hamburger and any other kind of cheese for the cottage. Parmesan would basically make it Eggplant Parmeasan. Maybe could also sustitute porabello mushroom slices for the hamburger.

Buy mince,bolognese sauce,onion,mushrooms and lasange pasta.Gently brown mince then add sauce,onoins n mushrooms.Boil pasta til soft though not too soft.Warm oven.Get an oven proof dish.Pour in some mince n sauce (bout 1inch).Put layer o pasta over mince.Repeat this til sauce used.Then you can add Whatever cheese you like on top n put in oven til golden brown.
