If you have access to a microwave here are my favorites from college.

Microwave Peanut Brittle Recipe


This is a very easy, fast and delicious way to make peanut brittle, cause it's made in your microwave!...once you try this, you will be making it all the time...warning: very habit-forming.

1 cup sugar
1/2 corn syrup
1 1/2 cups dry roasted salted peanuts
1 tablespoon butter
2 teaspoons vanilla
1 teaspoon baking soda


13 minutes 5 mins prep

Combine sugar and corn syrup in a 3-qt heat-resistant plastic microsafe bowl.
Microwave on high for 5 mins.
Stir in peanuts; microwave on high for 2-3 mins longer, or until peanuts and syrup are lightly browned.
Add butter, vanilla and baking soda.
Mix until light and foamy (be careful, syrup is HOT!).
Pour quickly onto a buttered cookie sheet, and spread to desired thickness.
When cool, break into pieces.

Absolutely Simple Microwave Lasagna Recipe


A very easy microwave lasagna that is tasty and super simple to make!!!


1 lb ground beef or ground turkey
32 ounces pasta sauce
1/2 cup water
15 ounces ricotta cheese
1 egg
1 (10 ounce) box lasagna noodles
8 ounces sliced mozzarella cheese
grated parmesan cheese

6 servings

1 hour 20 minutes 20 mins prep

Microwave meat on high in uncovered bowl for 6 minutes.
Drain fat and chop meat up.
Mix sauce and water in bowl and add meat.
Mix rocotta and egg in samll bowl.
Coat bottome of glass pan (13x9, 2-3 quart rectangular)with 1/3 of sauce mix.
Overlap 1 layer of uncooked noodles over sauce mix in pan.
Coat with 1/2 of Ricotta mixture.
Layer mozzerella on top of Riccota mixture.
Sprinkle with Parmesan.
Repeat layers steps starting with the sauce once.
Cover layers with last 1/3 of sauce.
Cover pan with plastic wrap.
poke holes in plastic.
Microwave on high for 10 minutes.
Microwave on medium for 32 minutes.
Take off plastic and let stand for 1/2 hour

S'Mores

A great snack anytime.


2 graham cracker squares
1/2 plain chocolate bar
1 large marshmallow

1 servings

1 minutes 1 mins prep

On paper towel place 1 cracker square.
Top with chocolate and marshmallow.
Micro on high 15 seconds or until marshmallow puffs.
Remove from oven and cover with other cracker.
Eat like a sandwich

SNICKERS Fudge squares.

Fudge that tastes like SNICKERS BARS done totally in the microwave with no candy thermometer!!!!! Need I say more?????? YUUUUUUUUUMMMMMMM


1/4 cup brown sugar
1/3 cup unsweetened cocoa
1/2 cup butter
1/4 cup milk
3 1/2 cups confectioners' sugar
1 teaspoon vanilla
30 caramels, unwrapped
1 tablespoon water
2 cups salted peanuts
1 cup chocolate chips (milk chocolate, semi-sweet "or" a combination of the two)

64 "1 inch pieces"

16 minutes 10 mins prep


In a microwavable bowl, combine the sugar, cocoa, butter and milk.
Microwave on high for 3 minutes or until boiling.
Stir in confectioner's sugar and vanilla.
Pour into a foil lined greased 8 inch square pan.
In another microwavable bowl, heat caramels and water on high for 2 minutes or until caramels are melted.
Stir in peanuts and spread carefully over chocolate layer in pan.
In a small microwavable bowl, melt chips on high in the microwave for 1 minute or so.
Carefully spread over caramel nut layer.
Chill until firm.
Cut into 1 inch squares.
ENJOY!

MICROWAVE MEATLOAF

I know sounds crazy right! Try it on a google search, everyone know about this one cause it works so well.

1 1/2 lb. ground beef
2 c. soft bread crumbs or
saltine cracker crumbs softened with 2 tbl spn milk
1/2 c. chopped fine celery
1/2 c. finely chopped onion
1/4 c. finely chopped green pepper
1 1/2 tsp. salt
1 beaten egg
1/2 c. catsup

Combine the above ingredients in a medium mixing bowl. Mix well and pat evenly in a large pyrex pie dish, leaving a hole in the middle of at lease three inches. It should look like a meat donut. . Brush meatloaf with either catsup or bbq sauce your choice. Microwave at medium high for 25-35 minutes. Because of the different powers of microwaves keep an eye on the first one you'll know its done when the sides pull away from the dish. Pour off liquid and let stand covered with foil for 5 minutes.

Fire and Ice Salad:
Ingredients:

6 ripe tomatoes, sliced
1/4 pound quarter inch Feta cubes (You could also use cubed Mozzarella, or cheddar, or jack cheese.)
1 cucumber, seeds removed and cubed
1/2 cup pitted black and/or green olives, wedged

For the Dressing:

1/2 cup white balsamic vinegar (you can also use the dark balsamic - I just think this looks better)
1/2 cup fresh squeezed lemon juice
2 Tablespoons extra virgin olive oil
1 tablespoons fresh oregano
Use a wire whisk or put in glass jar with good fitting lid and shake well..

If you have a stove you could boil up some pasta to add to this salad. To give the salad more substance you could also add a canned beans (green, kidney, garbanzo, and/or wax beans).

If you're going to be ovenless for a while, hit the Salvation Army for a toaster oven (I paid $5 for mine). You can use it to make pizza, bake chicken, do french fries, fish, nachos, all kinds of goodies.

If you just want snacks, you can still do lots of good stuff like instant puddings, jello made with milk & fruit, frozen desserts, Fried chicken in a skillet, ditto fish/meat/omelets, and if you search "no-bake cookies" on the web you'll get thousands of hits.

I went 6 months without an oven cuz we couldn't afford one; now I don't use it all that much cuz it makes the house hot.

The house we lived in before this one used to really get hot in the summer, with the afternoon sun beating down on the living room windows. So I bought a toaster oven and put it on the back porch. I would use that in the summertime in place of heating up the oven. When we hit our max on salads, we'd have things like meatloaf and baked potatoes cooked on the toaster oven on the back porch so the house stayed as cool as it could. I do the same thing in this house but I've also added a two-burner hot plate on the porch so we can even have stir-fry on the hottest day. There's always a breeze on the back porch and it's in the shade so I don't get hot cooking out there. But as far as recipes go, you can cook up ground beef in the morning with diced onions, add taco seasoning to it, and have Taco Salads for dinner. Or fix the meat in the morning with the taco seasoning and onions and put back in the fridge until dinner. Take a skillet and a flour tortilla, add a tablespoon of oil to the skillet and heat it. Place the tortilla down flat in the skillet to make it soft. Flip it over and fill it with things like the cold meat mixture, shredded cheese, diced green chilies, sliced olives guacamole and sour cream. Put that on one side only and fold it over. By that time the bottom is browned so cover with something to keep it warm as you make more. We found one is plenty per person unless you have a big eater. And you can add or remove whatever you want in yours. You can change the cheese from cheddar to cojack or mozzarella or whatever you want. No oven needed. You can even fold it like an envelope instead of folded in half to seal everything in if you wish but I just fold it in half and it works for me. If it's not hot outside, you can add a step by putting it on warm in the oven to help melt the cheese. But on hot days - don't worry with that part. You could even plug a crock pot on the back porch and slow-cook a meal out there. Hope that helps.

Rice Krispie treats are good and easy. You can melt the butter and marshmallows in a microwave or on top of the stove. The actual recipe is on the box of cereal.

Rice Crispie Treats:
-box of Rice Crispies or Cheerios
-jar of Marshmellow fluff
-13" by 9" pan
-stick of butter
-big pot

in the big pot melt about half a jar of Fluff...until liquidy. turn heat low or off and add cereal. coat the pan with a thin layer of butter to keep crispies from sticking. pour fluff/cereal mixture into pan and smooth out. let set for an hour to cool. enjoy!

can also add peanut butter, chocolate chips, nuts, ect.

ALOHA PORK CHOP SKILLET
Prep Time: 5 min
Total Time: 30 min
Makes: 4 servings
2 tsp. oil
4 bone-in pork chops (1-1/2 lb.)
1 medium each: red and yellow pepper, cut into chunks
2 cans (8 oz. each) pineapple chunks in juice, undrained
1/2 cup fat-free reduced-sodium chicken broth
1/4 cup KRAFT CATALINA Dressing
1-1/2 tsp. garlic powder
1-1/2 cups MINUTE White Rice, uncooked
HEAT oil in large nonstick skillet on medium-high heat. Add chops; cook 5 min. on each side or until browned on both sides.
ADD peppers, pineapple with its juice, broth, dressing and garlic powder; mix well. Bring to boil. STIR in rice; cover. Reduce heat to medium-low; simmer 5 min. or until chops are cooked through (160°F.) Remove from heat; let stand 5 min.
TIPS
Substitute 4 small boneless skinless chicken breasts (1 lb.) for the pork chops. Prepare as directed, increasing browning time to 5 to 6 min. on each side.

Stuffed beefy tomatoe. Ainsley harriott's cous cous about 1.99 a box 4 2 packets that serve 2. cut off topp of tom, scoop out middle, follow instructions for cous cous, put inside tom........delicous in about 10 mins

Buttercups

Ingredients
-One 12 oz. bag of chocolate chips
-One jar of creamy peanutbutter
-Mini Muffin Pan
-cooking oil (the kind from the spray can)

Directions

1. Grease muffin sheet
2. Melt chocolate chips and fill muffin cups half way full
3. freeze for an hour or until hard
4. take out and put a tablespoon of creamy peanut butter in each muffin cup
5. freeze overnight
6. take out and enjoy!
