Gazpacho soup--a cold soup that I adore!! In a blender, puree two carrots, 1/2 bell pepper, 1 small cucumber, 1/4 of an onion, and 1 celery with 8-ounces V-8 juice. Swirl in a dollop of sour cream! MMMM!! Just add a meaty sandwich and a glass of cold milk and you have a nice meal.

Tuna salad. You don't have to actually turn on the stove and cook anything! Besides, when it's really hot, I don't really feel like eating anythng to greasy or heavy!

Chicken Apple Salad--
Lettuce, diced cooked chicken (cooked on a day when it's not hot), diced apples, blue cheese dressing plus, if you love it, extra blue cheese, and toasted sliced almonds. Time for lunch!

Make a nice cold plate:
rolled up deli ham and or turkey and or roast beef
potatoe salad served on a leaf of lettuce
small stickes of cheeses
Carrot and celery sticks
slices of melon (canteloupe, honey dew or watermeon).
olives, sweet pickles, dill pickles.
some kind of crackers
Looks pretty on a large plate.

chicken salad... i know you said it was too hot to cook, but throw a chicken breast on the grill or the forman, cook it and throw together a salad with whatever you can find in your fridge!!! Green Peas, olives, bell pepper, mushroom... the possibilities are endless!!!

I love to eat deli sandwiches; I put turkey (or chicken breast), spinach leaves, tomato slices, swiss cheese, and ranch inbetween two slices of whole wheat bread or a croissant. Yum! Also, instead of chips, I eat raw broccoli and baby carrots with ranch as a dip. I wash it all down with a glass of Kool-Aid, usually pink lemonade.

Grill some chicken breast & add to a salad or have a sandwich. Anything to avoid turning on the oven.
