I like cinnamon so this recipe makes a spicy, cinnamon flavored hard candy. Wrap pieces of it in decorative bags for perfect stocking stuffers. You can vary the flavor by substituting lemon, orange, anise, or other oils. These flavored oils can be found in candy making supply stores and drugstores.

INGREDIENTS:
1 cup confectioners' sugar
3 3/4 cups white sugar
1 1/2 cups light corn syrup
1 cup water
2 teaspoons cinnamon oil
1 teaspoon red food coloring

DIRECTIONS:
Roll the edges of two 16 inch square pieces of heavy duty aluminum foil. Sprinkle the foil very generously with confectioners' sugar.
In a large heavy saucepan, combine the white sugar, corn syrup, and water. Heat over medium-high heat, stirring constantly until sugar dissolves. Stop stirring, and boil until a candy thermometer reads 300 to 310 degrees F (149 to 154 degrees C). Remove from heat.
Stir in the cinnamon oil and food coloring. Pour onto the prepared foil, and allow to cool and harden. Crack into pieces, and store in an airtight container.

DIRECTIONS:
Prepare your candy growing area by thoroughly cleaning and drying a 2 quart jar. You will need a place for it to rest undisturbed for about 2 weeks.
In a large bowl, place the water. Dissolve sugar in water, a little at a time, stirring each time until sugar is completely dissolved, until no more sugar can be incorporated. Pour sugar water into clean jar and place a bamboo skewer in the jar, being sure the top sticks out over the surface of the water. Cover with a cloth, to keep out dust, and let rest until all water is evaporated and crystals have formed on the skewer, several days.
NOTE: For larger crystals, try "seeding" them, by wetting your skewer and rolling it in sugar before placing it in the sugar water. Be sure not to disturb the crystals as they are growing.

1 Glass jar or drinking glass Food coloring (optional)
1 Piece of cotton string 1 c Water
1 Pencil or stick 2 c Sugar
1 Paper clip Additional sugar

Tie a short piece of cotton string to the middle of the pencil or stick.
Attach a paper clip to the end of the string for a weight. Moisten the
string very lightly, and roll in a bit of sugar (this will "attract" the
sugar crystals from the syrup to the string). Place the pencil or stick
over the top of the glass or jar with the string hanging down inside.

Heat the water to boiling, and dissolve the 2 cups of sugar into it. For
the biggest crystals FAST, heat the sugar-water solution a SECOND time, and
dissolve as much additional sugar as you can into it. Add a few drops of
food coloring to the solution if desired.

Pour the solution into the prepared glass or jar and leave undisturbed for
a couple of days. Depending on how much sugar you were able to dissolve
into the water, you should start to see crystals growing in a few hours to
a few days.

Instructions
In a medium saucepan, heat 2 cups of the sugar and the water. Do not boil! Stir until the sugar is completely dissolved. Gradually add a few drops of the food coloring of your choice and the additional sugar, stirring continuously until all the sugar is dissolved.

Pour the solution into a clean glass jar and tie the pieces of string to the pencil and suspend them across the mouth of the jar so that the ends hang into the sugar water.

Crystals suitable to eat will form in an hour and continue for several days to a week. Pieces can be broken off and eaten after the first hour. (But, try to hold out for big crystals!)

Although you may see quick results in small measure, the larger rock candy crystals you're accustomed to seeing in the candy store will take some time to form.

Sugar and water depending on how many you want, just dissolve the sugar in warm water, put it under a low fire when it starts to carmelize pour into your favorite mold ans let it stand you might need a little non flavored pam so that they don't stick.
