ALOHA PORK CHOP SKILLET

Makes: 4 servings
2 tsp. oil
4 bone-in pork chops (1-1/2 lb.)
1 medium each: red and yellow pepper, cut into chunks
2 cans (8 oz. each) pineapple chunks in juice, undrained
1/2 cup fat-free reduced-sodium chicken broth
1/4 cup KRAFT CATALINA Dressing
1-1/2 tsp. garlic powder
1-1/2 cups MINUTE White Rice, uncooked
HEAT oil in large nonstick skillet on medium-high heat. Add chops; cook 5 min. on each side or until browned on both sides.
ADD peppers, pineapple with its juice, broth, dressing and garlic powder; mix well. Bring to boil. STIR in rice; cover. Reduce heat to medium-low; simmer 5 min. or until chops are cooked through (160°F.) Remove from heat; let stand 5 min.
TIPS
Substitute 4 small boneless skinless chicken breasts (1 lb.) for the pork chops. Prepare as directed, increasing browning time to 5 to 6 min. on each side.

I usually whip up a frittata. I throw in whatever I have in the fridge, bell peppers, mushrooms, spinach, onions, ham, gruyere, tomatoes, etc. Be creative. Here's a sample:
2 tablespoons olive oil
1 large yellow onion, halved,sliced thinly
5 slices bacon, chopped coarsely
1-2 clove garlic, crushed
2 lbs potatoes, peeled,chopped coarsely
6 eggs
2 tablespoons water
salt & freshly ground black pepper
Heat half the olive oil in a non-stick frying pan.
Cook onion, bacon and garlic, stirring, until onion is soft.
Add potato and cook, stirring for about 10 minutes or until tender.
Transfer the potato mixture to a medium bowl, clean the frying pan.
Coat the inside of the pan with the remaining oil and return the potato mixture to the pan.
In a medium bowl, whisk the eggs and water with salt and pepper until well mixed; pour over potato mixture.
Cook the frittata over low heat, covered loosely with foil, for about 8 minutes or until the base is browned lightly.
Place frittata under a hot grill (broiler) until set and top is browned.
Half a cup of grated cheese can be added to the egg mixture or sprinkled on top before grilling, if desired.

Go buy those pre-cooked chicken packages, pick up some wraps and lettuce. Make a delicious sauce by mixing yogurt, dill weed, salt, pepper and a bit of lemon. Have wraps for dinner, some people like tomatos, peppers and onions as well. Enjoy!

Chicken fettuccine. Buy a jar of sauce, add some mushrooms, Parmesan cheese, and some pre-cooked chicken. Serve over cooked noodles. It only takes a few minutes and can be really good. Serve with some english peas and garlic bread.

INGREDIENTS:
3 (10.75 ounce) cans condensed cream of chicken soup
3 (10.75 ounce) cans condensed cream of mushroom soup
2 cups water
1 (15 ounce) can peas
1 pound boneless chicken breast halves, cooked and diced
DIRECTIONS:
Combine cream of chicken soup, cream of mushroom soup and water in a large pot or saucepan over medium low heat. Add chicken and cook, stirring, until heated through. Stir in peas, heat through, and serve over toast.

I agree with the person who mentioned the wraps - but I like to make them with humus, tabouli and precooked grilled chicken.
You should try looking at foodtv.com. If you search under power search, you can look for recipes that are categorized as quick and easy. You can even type in some indgredients you already have so that you can make something quick without having to make a trip to the grocery store.

allreceipes.com has a great variety of things. One of my mom's favorites is SOOOOOO simple and is very good!!! Kinda rich though.
This will feed 3 to 4 people. (you can use the light options of all of these if desired)
-3 chicken breasts cut into strips and cooked
-1 can cream of chicken
-1/2 cup sour cream
-4 oz. grated monterey jack cheese
-1/2 cup water
-1 1/2 tbsp poppy seeds
-1 roll ritz crackers (crushed)
-3/4 stick of butter (melted)
- cook chicken w/ salt & pepper to taste
-stir together soup & water in sauce pan over medium heat to remove all lumps
-remove from heat & stir in sour cream
-Stir in cheese & 3/4 tbsp poppyseeds
-put chicken in medium sized oven safe dish, and pour the {sour cream/cheese/cream of chicken} mixture over cooked chicken
-mix together remaining poppyseeds, melted butter & cracker crumbs in seperate bowl
-sprinkle over chicken
-bake @ 350 degrees for 30 minutes
Is actually less time consuming than it looks, maybe 30 minutes to prep and 30 to cook

Chicken or beef stir fry takes about 10 minutes get the then strips of chicken or a nice lean piece of beef and slice into thin strips use water or a healty dinner, add fresh vegatables or frozen and viola your done.

heres a winner i use all the time and its fast and really good boneless skinless chicken breast or if you have left over chicken take it off the bone prepare a box of stuffing mix 1 box of frozen broccoli or any vegtables you like. 1 can of cream of chicken soup. put stuffing in a baking dish or pan put the chicken on top add vegetables on top of the chicken pour cream of chicken soup that has been mixed with 1/4 cup milk or water on top bake at 350 for 25 minutes. you have a whole meal in one pan its so good!!!!!!!
