Roast parsnips are nice. Par boil them for about 10 minutes then put them in the oven to roast for around 30 minutes with a little olive oil, salt and pepper. 5 minutes before they're done, pour a little honey over them and put them back in the oven. Yum!

This will make your kitchen smell even better....I slice up an onion and add for a little more flavor
Roasted Fennel with Parmesan
Recipe courtesy Giada De Laurentiis
Ingredients
4 tablespoons olive oil
4 fennel bulbs, cut horizontally into 1/3-inch thick slices, fronds reserved
Salt and freshly ground black pepper
1/3 cup freshly shredded Parmesan
Instructions
Preheat the oven to 375 degrees F.
Lightly oil the bottom of a 13 by 9 by 2-inch glass baking dish. Arrange the fennel in the dish. Sprinkle with salt and
pepper, then with the Parmesan. Drizzle with the oil. Bake until the fennel is fork-tender and the top is golden brown,
about 45 minutes. Chop enough fennel fronds to equal 2 teaspoons, then sprinkle over the roasted fennel and
serve.

If you want something a little spicy here's a great one:
2 cans Cut Green Beans
2 cans Whole Kerrnel Corn
1 can Rotel
Empty all them in the pot. Add salt, pepper, and garlic powder. Cook on a medium heat til it starts boiling and then simmer for about 30-45 minutes . It's not extremely hot, my two kids 2 and 6 eat it. If you want it spicier you can do 1 can green beans and 1 can corn.
If you have a can of chicken broth, for an even better flavor drain most of the water from the veggies and add the chicken broth to simmer.
Very simple, very good!

Just stick with your theme and oven-roast some good fresh vegetables. You can do any of asparagus, green beans, eggplant, carrots, mixed color bell peppers, pearl onions, or brussel sprouts just lightly tossed in extra virgin olive oil with salt and pepper and oven roasted at 350 for 25 to 45 minutes. If you like you can add a little minced garlic and fresh herbs in the last 10 minutes or so. You can also cut in half and roast/broil some good organic heirloom tomatoes. Personally, I'd go for the asparagus and tomatoes at this time of year, but take your pick.

throw some baby carrots in with the roast, and cut an onion in quarters and put it in the pan, too. It will give it flavor, but it will be easy to take out before you serve it. The baby carrots are great, because you don't have to wash or peel them or anything. just dump them out of the bag right into the roast pan. you could also throw some broccoli, asparagus, or artichokes in a steamer. Nothing's easier than that. Have a good dinner!

Wow. that sounds yummy. When I make a roast I usually cook it in either a crockpot or an ovenbag. I also throw in plenty of chopped onions, baby carrots, and potatoes. All of this tastes great over rice. Which tastes even better with the leftover juices (gravy) from the meat. Throw in a garden salad for starters and some warm bread and you have a filling and complete meal. Enjoy!

Take those potatoes that you quartered ,perferably red skin potatoes and boil them until done,don't bother to remove the skins,just partially mash them,put them in a baking dish sprinkle them with cheddar cheese and put them into the oven until cheese is melted ,remove from the oven spread a layer of sour cream then a layer of bacon bits simulated or real whichever you prefer last but not least green onions,serve

I would say use a bag of baby carrots. You can just throw them in with the roast, and they will pick up some wonderful flavor. Sounds good, so what time should I be over for dinner?

They have stirfry medelys in the frozen section of the supermarket that i like to steam in the microwave. Follow the microwave directions (using water), add some salt and pepper, and it's a healthy alternative without the oil
