I made this for my girlfriend and I a few weeks ago.
Parmesan Incrusted Salmon
* 1/2 cup Parmesan cheese
* 1 cup Italian seasoned bread crumbs
* 1 teaspoon dried tarragon
* 1 teaspoon dill weed
* 1 cup white wine
* 1/4 cup teriyaki sauce
* 1 tablespoon melted butter
* 1/4 cup chopped red onion
* 1 tablespoon minced garlic
* 2 pounds salmon steaks
DIRECTIONS:
1. In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, tarragon and dill.
2. In a medium saucepan over medium heat, blend white wine, teriyaki sauce, butter, red onion and garlic. Cook and stir until onions are tender.
3. Press one side of each salmon steak into the Parmesan cheese mixture. Place steaks crust side up in saucepan with white wine mixture. Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.

Salmon with Dill Mayonnaise
4 Salmon Fillets or steaks
1 lemon
splash of white wine
Salt and black pepper
Melted butter for brushing
1 - 2 tbsp dill, chopped
6 - 10 tbsp mayonnaise(depending how much dill you like)
8 sheets 12” x 8” aluminium foil
Method
Preheat the oven to 190C/gas mark 5
Make a parcel using 2 sheets of foil per salmon fillet or salmon steak.
Brush the top piece with melted butter.
Place the salmon on the foil.
Brush some more melted butter over the salmon, squeeze over some lemon juice, add a splash of wine and season with salt and pepper.
Loosely scrunch the foil together.
Bake salmon in the oven for 10 minutes.
Mix the dill with the mayonnaise and season to taste with a little lemon juice, sea salt and pepper.
Serve hot or cold with a green salad and new potatoes.

Finely chop a couple of chillies a clove or two of garlic, some onions and maybe a pepper. Zest a lemon (or lime works well), and cut it in half.
Boil some Jersey Royal new Potatoes, maybe do some broccoli and carrots.
Heat a knob of butter in a frying pan, add a touch of oil and throw in the chillies and garlic. When the butter has melted plce the salmon in skin side down, and maybe increase the heat (this way you should get a nice crispy skin on the fish.). After a few minutes add in the pepper and onion, squeeze in some lemon juice to taste, and the zest of the lemon. Turn the fish over after a few more minutes and once it's cooked through serve it with the potatoes and veg.

sure classic fish in paper method- Don't have a cookbook handy so you get the English translation ;
pre-heat oven to 375
get a roll of parchment paper- in a pinch you can use aluminum foil although it screws up the French translation
If your fish isn't in individual portion sizes cut into those sizes now
cut/tear off pieces that are three times the width of the fillet. Got that ?the piece is as long as the roll and three times wide rthan the fillet
place each fillet skin side down in the center of the parchment
sprinkle with salt pepper ,white wine - do not use cooking wine to say it's junk would be kind If you dont have or are not allowed to have wine use fresh lemon juice diluted about 4 times with water .you want the acidity
add 1/2 tsp of olive oil
- and garnish with fresh rosemary and thyme
add small stacks of red peppers cut into match sticks.
Bring the front edge and the back edge of the paper together over the center of the fillet and roll up tightly tuck the loose ends under the fish and place on a cookie sheet, bake until the parchment turns light brown and has puffed up ...remove from oven
Mean while bring 16 oz of heavy cream to a boil reduce heat to medium allow to reduce in volume by 1/2 and squeeze in the juice of 1 lemon ,more if you like lemons ....serve

Yep. Marinate them in a mix of a bottle of Vodka, Gin & Jack Danials for 1/2 an hour. Cook in the oven on a LOW heat for about 30 mins.
Then throw away the salmon and drink the liquid.

you may save my ideas for yet another day. yet for now, besides you cook sparkling salmon is also reliable. I make my personal bread crumbs from bread which will be some days previous. position the slices in the oven, low warmth until eventually dry, then improve the temp to about 350. once quite brown, remove, cool, and ruin until eventually it really is all crumbs. In a baggie, upload salt, pepper, dried chives, dried parsley, and lemon pepper. upload the crumbs and shake. you'll in reality choose somewhat for the salmon. save some thing else of the crumbs for fowl or beef chops. In a bowl, blend one egg. Dip the salmon and shake it in a baggie with some crumbs. Pre-warmth oven to 450 ranges. position the breaded salmon, dermis aspect down on aluminum foil (no oil) and cook for 10 minutes. Melt 1/4 real butter
Add 1 tablespoon of flower
Stir till the butter has soaked up all of the flower.
Add water, milk, half and half or cream, as needed to prevent burning.
Add lemon juice, garlic and salt to taste.
Add salmon and cook till it turns pink and brakes apart evenly with a fork.
Serve with fresh vegetables, never caned.

Make a hollandaise sauce with plenty of lemon to serve with them - recipe in most cook books or go search on net. For cooking I like to steam mine in a little butter and milk. You know when they are done when they have changed colour all through to a light pink. Alternative is to microwave - put in dish with milk and butter and cover and microwave for 3 - 4 minutes on medium power, watch though and if is starts to spit power is too high.

I like to take salmon and marinate it in zest Italian dressing for at least 30 minutes then grill. If no grill is available then broil for a few minutes. I nice sauce is to take sour cream, dill and horseradish mix together to taste. You could add lemon to that as well.

Brush some crushed garlic and olive oil on them, wrap in foil then bake for half and hour, they are yummy served with a green salad or new potatoes
