Long answer:
Your goal in any violent encounter is to end the encounter with a minimum of damage to yourself. This becomes exponentially more diffiicult when facing multiple assailants. Assuming that there is no significant reason for you to stay (protecting another person who can't run, for example), escape should be your first objective. Although tactics will change drastically from situation to situation, here are a few general tips.
1) Don't panic. This is a cardinal rule in any encounter. Remaining calm and making intelligent decisions is the first step towards any victory.
2) Use the terrain. Try to arrange the situation in your favor. When facing multiple opponents, don't allow yourself to be surrounded. Try to move so that paths to your back are blocked off. Hallways and corridors can help accomplish this. ALWAYS leave yourself an escape route. If it looks like you're being backed into a corner, find a hole and go through it. If there's no hole, make one. In many situations, it's helpful to establish a minimum distance that you're comfortable with and try to maintain it.
3) Weapons are everywhere. Use them. Bottles, sticks, rolled up magazines, belts, soft drinks, furniture, and anything else that you can swing or throw at your opponent is a useful tool. Anything that harms, stuns, blinds, distracts, unbalances or hinders the movement of your assailants can be used in your favor. Use ALL of it.
4) Keep talking. It may still be possible to talk yourself out of the situation. Even if combat is inevitable, talking hinders your opponents' abilities to communicate with one another. Hopefully, it also focuses their attention on what you're saying, rather than thinking about what they're doing. If you can out-think them, you've already won.
5) Wait for the right moment. Your opponents have the advantage of numbers. Give yourself the advantage of surprise. Assuming that the encounter didn't start with someone attacking you, use whatever time you have to formulate a strategy. Carry out that strategy when the opportunity arises, not before and not after.
6) Remember that your opponents are human. They feel pain and they're afraid of injury. As mentioned above, your primary goal is to end the encounter. You don't have to kill everyone, or beat up everyone, or knock everyone out. You just have to make them unwilling or unable to harm you. To that end, breaking someone's fingers is just as effective as breaking their head. Use the techniques that will accomplish your goals in the quickest possible manner.
7) Respond with force. There's no such thing as a fair fight, and your opponents have already broken any rules that may have existed by outnumbering you. Don't be afraid to strike for the eyes, groin, and throat. Try to avoid grappling at all costs. You just can't grapple more than one person. If someone grabs you, manipulate small joints. It doesn't take much force to break a finger. Use it. The more quickly you take out your first opponent, the more likely the others are to abandon the fight.
8) Pick on the little guy. I think Madkins007's response was very helpful, but I disagree with him on this point. If you have the option of picking your first target, take the one that's the easiest to bring down. It's one less thing that you have to think about and one more reason for your opponents to leave you alone.
9) Always keep in mind that you're not there to win; you're there to survive. The best way to avoid any attack is not to be there when it happens. To hell with pride or bragging rights. End the encounter as quickly as possible. If you see a way to escape, take it. If one of your opponents wants to escape, let him. Taking on multiple opponents is dangerous for even the most skilled fighters. Escaping from the situation relatively unharmed should be enough of a victory for anyone.

Movements, can't help.
Strategy-
- decide quick your goal- victory, minimal pain, what? Is your goal best served by fighting or running?
- take out the biggest threat and/or leader first. If you can lay him down effectively, the others will think twice.
- find your ground. In general, get high or in a place that limits them. Don't let them get behind you- but also don't let them force you into a place that limits your options
- if this is a general riot, not specifically an attack on you, become a non-target and fade away

I have been in this situation myself years ago and the only thing to do is hit first and then run like mad. You will only have time to hit one of them make sure it is a groin shot so that at least he cant chase you and if he looks hurt his friends might stay and make sure he is alright. If the other two guys do follow you try to out run them if you cant you may have to fight the best thing to do is run until you can find some kind of weapon like a piece of wood or a stick or something. If you cant find a weapon throw dirt in one of there eyes and fight the last guy remember the best weapon you can have in a street fight is a kick to the groin.
I hope you wont need any of this information but if you do remember dirt in the eyes and kick to the groin if that fails RUN.

If its 3 against 1 and u dont know what to do just RUN!!! There is no point of fighting. If u must know, quick jabs to the head can daze someone for just enough time so u can get out of there. Groin shots r da best. In street fighting ANYTHING GOES. Just remember that and u be ok.

Buy a dictionary, and book of English usage on how to apply proper punctuation and grammar
Read/study these as you wait in the emergency room.
When you encounter the assailants, equip one of the texts in each hand and use them as a weapon to fend off your assailants.

unless you can do a good jet li impersonation your in trouble. try and talk your way out first. if that doesn't work call 911 on cell phone. you should carry pepper spray with you in case your attacked. spray their eyes and knee them in the thigh. then run.

bring some weapontry (bat, pole etc.) maybe a gun while your at it.
Try and dodge everything and always hit sensitive parts (balls, face etc.) I am not really that great of a street fighter, remember unless they are really trying to hurt you don't do anything
