If you want easy recipes Rozzane Gold has written some great books titled 1-2-3. They involve only 3 ingredients and are really yummy and easy to prepare.
I am also a picky eater.
The easiest things for me to make that most people enjoy is stuffed shells and baked squash.
For the stuffed shells all you need is the premade pasta shells, ricotta cheese, mozzarella cheese, basil, oregano, and tomato sauce.
Add the cheeses, basil, oregano and a little bit of the pasta sauce together. In a baking dish put a layer of tomato sauce on the bottom. Then fill the shells with the cheese mixture and place in the dish. Put a thin layer of tomato sauce on top and then lots of cheese and bake in a 375 F oven for 45 minutes. The first 25 minutes cover the pan with foil to prevent the cheese from burning.
For the Baked squash. All you need is either an acorn or butternut squash, butter, cinnamon, and brown sugar.
Cut the squash in half. Scrape out the seeds and throw them away. Place about 2 tbsp of butter on the edge and inside each of the half's. Sprinkle some cinnamon on top and about 2-3 tbsp of brown sugar. The amounts can be changed depending on how sweet you like it. Wrap each half in tin foil and bake at 375 F for about an hour or until soft.

You can always try experimenting. I experiment with different types of burgers (who can't resist a good burger). Instead of using ground beef all the time, substitute ground chicken or turkey. Or better still make a mixture of beef with mild sausage. You can make inside out burgers (put cheese, mushrooms and even bacon on the inside and mound the burger around it). When they eat it is a surprise. Also, a good option is to make tuna and macaroni salad....I add in tomatoes, blanched broccoli and other vegies. My guy just loves it. And, all kids like hotdogs. I watched the food channel one night and Rachel Ray (the 30-minute meal girl) made a macaroni and cheese with hotdogs that she added things like ketchup, mustard, relish and onions (all the stuff that goes on to hotdogs) and called it mac and cheese ballpark style. There are also lots of different things that can be done with chicken and a little imagination. Try using some of the campbell soups. There is also a good recipe for oven fried chicken that uses mustard instead of egg for the coating (you may have to think it out a little) and rather than breadcrumbs, use chopped walnuts or those canned onions that we all use to make the green bean casserole. Good luck!

I like porcupine meatballs but it contains hamburger, rice, canned tomatoes and onions. Your picky husband like these?
chop onions and add to raw hamburger -add seasoning - salt, pepper, garlic powder Add 1 cup of long grained rice. Mix and form into balls. Fry in frying pan so balls hold their shape.
Meanwhile, open a large can of tomatoes and put them into a large casserole dish. chop them up with turner if the tomatoes are whole. Add a medium can of tomato sauce. Add a bit of white sugar (a couple of tablespoons) and stir. Add meatballs (make sure liquid covers meatballs - if it doesn't add water so that they do), cover and bake at 350 for a little more than 1 hour. Serve with a salad.
You can have this all done before hand and just pop it into the oven. I've made this without making the meatballs. I just fry the hamburger, drain, and add everything else to my casserole dish.
Good luck..

One of our favorites used to be on the back of the stove top box. Chicken breasts in a oven casserole with cream of mushroom soup poured over the top. Lightly moisten a box of stove top and pour on top of that and bake at about 375 for 35-45 minutes. Delicious and you can add different ingredients like broccoli, peas, mushroom slices to make a little different. (Sometimes I have to cover with foil 3/4 the way through to keep stuffing from getting over browned-maybe a lower heat??)

Any thing you prepare with love for them will be ok... But if you feeling creative with now time and limited budget, go to www.foodtv.com and check put for Rachel Ray's 30-minutes recipes... They are very simple and creative... She might be annoying on TV, but her recipes makes a lot of sense....
For example:
A flour tortilla with black beans with onions, garlic and peppers chopped.... and on top a fried egg with shredded cheese and salsa....
Or add some Honey mustard and rosemary to your Pork Chops.... or maybe some lemon or lime juice to your chicken or marinate it with Italian Dressing.... Or add some 1 inches hot dog pieces to your mac and cheese....Try to use parsley or cilantrillo to decor your plate... food is not only tasting it is also very visual.
