Take a cab from the airport to the Catalina Marina Del rey flier. Should not be more than $25 (cannot be more than that). Then take the ferry over to Catalina for around $33 per person. Check departure times on site as there are not many.

The super shuttle is your best bet. They offer tourist discounts and you can arrange for a pick up after you are done with Catalina.
Or if you are adventuous, take the free bus from LAX to the blue metro line. The blue line will take you directly to Long Beach, and I am sure you can get a cab from there to the Catalina Express.
Remember, the Catalina Express only launches once or twice a day, so check the times.

RE:
What is the best way to get from LAX to Catalina Island.?
In the past we have rented a car and driven to Long Beach and taken the ferry to Catalina Island. I hate to rent a car and pay for it to just sit there.

It's about 5 miles to Marina del rey - in no traffic figure around $20. With traffic, it could be more.
Super Shuttle will be around $15 for the first person and $9 for the addiitonal, in a shared van.
To get to Long Beach, expect $60+ for a cab. Super Shuttle is around $28 for the first person and $9 for each additional.

Well there isn't a better way... to could take the Green line from LAX to the blue Line into Long Beach and take a bus into the Harbor but there isn't a direct route into the harbor beside a taxi or mas transit.

Any way you slice it, you still have to take a boat or a plane to Catalina. Okay, well, I guess you could swim ...
