I agree with the shrimp or chicken fettucini alfredo. I buy the refrigerated fettucini and refrigerated alfredo sauce in the grocery store. First I saute some red bell peppers and a little bit of green onion in a pan, add the alfredo sauce, warm it up, add the cooked chicken or shrimp to heat and then add crumbled (real) bacon (a couple slices) to the sauce, pour over the fettucini. It is delicious and so easy. Try it before you visit and you can adjust the ingredients as necessary. Serve it with a nice spinach salad and and easy desert of ice cream with fresh berries and he will love it. Good Luck.

Okay... I try to keep meals simple, yet very enjoyable.... first of course, a salad... zuccinni cut in thin strips longways, lettuce, simpson leaf spinich, fresh mushrooms, diced tomatoes and cucumbers.... topped with grated provalone cheese and a greek vinegette dressing. Next the main course.... take two cans of creme of chicken soup, one cups of hot water, a pack of Hidden Valley Ranch dressing (dry), one small chopped onion, a half teaspoon of season salt, a dash of crushed red pepper, 2 cups of garden rotoni ( personnally I like the vegtable rotoni, the color and taste are great) and two chicken quarters. Preheat the oven to 425 degrees. Place all the ingredients in a 9x11 baking dish or cake pan cover with aluminum foil and bake for 25 minutes.. turn the oven down to 350 and bake for an additional 15 minutes. As a side I usually make glazed carrots and steamed green beans with a hint of butter. For desert.... something really simple.... strawberries and a nice zinfindel both chilled of course with chocolate syrup and whipped creme.... Not just a memorable meal... but a prelude. Enjoy

There's an old favorite saying that is applicable for your planned event.
"The success of a dinner is best determined by not what's on the table, but what's on the chairs".
If you're in good company it shouldn't matter the menu or whether it's good to perfection or not. :)
