I use OmniPage scanning software with my HP scanjet 3970. As tee_nong_noy said, it asks if I want to scan another document or if I am finished. I have tested it up to 20 pages with no problems, saving the document as a MS Word document. It page breaks with each scan. Years ago, I used another brand of scanning software, that had similar capabilities.
Possibly do you mean "automatically" scan documents? You can buy document feeders for some models of scanners. Thus, you can load a stack of sheets to be scanned, turn it on, and it scans to the end of the stack.

There is an undocumented feature of Microsoft Word. You can scan directly from word and scan multiple pages into one image. You are essentially scanning to the image writer but do have the ability to save it as a Doc file (or rtf or anything else that Word handles). Use the help feature in Word for step-by-step instructions.

First of all, select "scan document", then set your options.
Scan the first page
When it's finished, click on "scan another" and follow the instructions
You can scan as many as you wish, and they'll all be stored in the same file/folder
