Use canola oil at high heat. After frying, blot food well with paper towels to remove excess oil.

the reason that fried foods are oily is improper cooking temperature' there are three reasons for improper cooking temps.
1) temp was wrong from the start- heat oil to 275
2)too much food was added which brought oil temps down- think about it, you have 375 oil and you place zero degree fries into it what do you think happens to the temp of your oil ? yep it goes down- use smaller batches
3) Inadequate recovery time- oil will cool off so allow oil to get back to temp before adding the next small batch or have two pots of hot oil available and rotate between them.
Deep frying is a dry heat cooking method. WHAT ?
the way it works is that hot oil turns the water in the food into steam thereby cooking and creating a zone of bubbles around the food which oil cannot penetrate. lose that bubble zone and enter the grease zone

the resturant i work at uses panko bread crumbs instead of regular flour for the batter. the bread crumbs(for some reason) don't leave that greasiness that most fried food has

use peanut oil and par cook at 450 degrees...finish in the oven on a grease rack...oven at 350 or less depending.

peanut oil is very good for high heat, and the absorbtion in your food is less. canola is also a good oil to use as well
