Marinated Chicken Breasts with Roasted Vegs w/ avocado side salad

1/2 cup of Olive Oil
2 Tablespoons lemon juice
1 clove of Garlic
1 cup white wine
Salt and pepper to taste
Zest from a lime

For salad:
Cut up 2 avocados into chunks & salt and pepper to taste
Place into bowl and use juice from 1 lime and pour over.
Cut up 1 large tomato and mince one small sweet vidalila onion or three green onions. Use two tablespoons of white vinegar and 1 tablespoons of olive oil. Toss and chill for 1 hour.

Take chicken breasts and tenderize and place into marinade. Place in frig for 1 hour.

Cut red peppers,green peppers, onions, zuccihini and new red potatoes in halves. You can either grill them or put them on the stove and stir fry them in some olive oil. Cook until lightly brown and onions carmelized.

For the breast you can either grill outdoors or place in broiler, pan searing is fine as long as you use olive oil.

I make a delicious salad by peeling, chopping and boiling carrots until they're soft. While they're cooking I mix some olive oil with minced garlic, lemon juice, curry powder and fresh parsley. I allow the carrots to cool and then mix them with an equal quantity of chickpeas (sometimes I add in some toasted sunflower seeds for crunch). I toss everything in the seasoned olive oil and serve warm or at room temperature.

I also like to make spinach salads and top them with soft cheese (try a mild gorgonzola or brie), and hazelnuts. For the dressing, I mix equal parts olive oil and balsamic vinegar, and then add in some minced garlic, honey and fresh rosemary. I heat the dressing up on the stove until it bubbles and then quickly pour it over the salad, which will reduce the spinach just a bit and cause the cheese to melt a bit. It's fantastic!

this is a fusion twist..

try one grilled filet of marinated and grilled grouper. marinate the filet in soy sauce, brown sugar, ground ginger, and sesame oil for 3 hours. make a cold aoli sauce with lemon juice, ground garlic, 1 egg yolk, olive oil, lemon juice, and ground fresh oregano and lemon zest.
keep sauce for garnishing your plate.

do a cross hatch of the sauce to make a pattern on the plate...

saute some blanced green beans and toss in a marinara made with water chestnuts, and a hint of chinese 5 spice.

for a starch, use orzo boiled in miko soup mix and garnished with scallions.


the presentation is a composed plate of sauce first..then orzo...then grean beans and topped with the fish.
garnish the top with a fresh cilantro sprig and chiffonade oregano


this greek/ asion fusion dish has had my customers raving.

I love to roast a sweet potato, then split it and top it with a mixture of spiced black beans, fresh salsa, fresh chopped cilantro, and maybe a dollop of plain nonfat yogurt. It's really yummy food that will stick to your ribs, but it's got practically zero fat and cholesterol, and it costs about $2 to make.
