Provided there is NO green, raw potatoes are edible. They belong to a family of which many members are highly poisonous and while potato tubers are not, the green parts of the plant and the berries are not good to eat. When tubers are exposed to light they will turn green and begin to develop the toxins.

Most of the goodness in potatoes, vitamin C, is in the layer just under the skin. When they are peeled, they contain mostly starch.

Other members of the family of which parts are edible include tomato, blueberry, cape goosberry, peppers (sweet and hot) and aubergines. Highly poisonous members are Deadly Nightshade, Thornapple and tobacco.

In fact, raw potatoes are very healthy. Cooking them destroys much of the Vitamin C and removes some of the minerals, so you are much better off to eat them raw. I like the crunchiness of raw potatoes, and sprinkling them with lime and salt makes them really yummy.

I don't know, but if you julienne cut the potatoes and fry them with chopped garlic and a little salt and a 2 tbsp. water they're delicious. The potatoes don't have to be cooked all the way, which makes for a nice crunch. Can be eaten with baked seasoned chicken and rice.

As long as you wash them, raw potatoes are actually healthier than cooked because when you cook them, they lose some of their nutrients. But how you prefer to eat them raw is beyond me!!
