You can use Messenger Plus to do this. It's a freeware program that adds a ton of features, including custom away statuses and messages, to MSN Messenger.

From the website:
"Personalised Status:
Messenger Plus! offers to personalize your status, such as "away" and "busy".
You can define a message that will be sent to your contacts when they talk to you, and you can even select what contacts should see the message or not.
You can also define a name tag that will replace what your contacts will see in their contact list, instead of the usual "away" or "busy".
Your personalized status can be saved into presets, if you want to use them often. Up to 30 status can be saved into presets.
The Personalized Status window is opened whenever you select "away" as your status, or it can be opened by going in the main Messenger window, in the File Menu, in Your Status, by clicking the Personalized Status menu.
Note that you can use Tags and Commands in your message.
The Personalized Status options are found in the Preferences panel, in the Personalized Status section. "

There are MANY more features listed at http://www.msgplus.net/features_all.php
