I'm going to entertain a special lady friend of mine and I was thinking of preparing beef medallion w/ Champange sauce.

Beef w/ Champange sauce? doesn't really go, you should use a merlot of Shyraz. but if you want to use Champange, use a 2 cups of champange with shallots and garlic reduce that then add thyme(just a little) and beef stock like 2 cups, then add a little brown sugar and salt and pepper. and a little corn starch to make it thick, and then finish it with butter.

285ml (½ pint) Stock
115ml (4floz) Champagne
1 tbsp Butter
1 tbsp Flour
Salt and Pepper, to taste

Mix the butter with the flour thoroughly.
Place in a saucepan over the heat and stir constantly until the mixture is dark brown.
Add the stock slowly whilst stirring continually.
Bring to the boil and simmer gently for a few minutes, season well with pepper and salt and strain.
Add the champagne and serve.

Seems like there's more recipes for Champagne Sauce for Chicken or Seafood available...not beef...?
