You could write something along the lines of this:

The Manager or whoever,

Recently I was in your store or had a the great pleasure of doing buisness with you (put in which ever one suits the situation) I received exceptionaly high standards of service and was more then pleased with the price and quality of the item, Your staff member ( ??????) was most helpful...

YOu get the general idea of the letter you just have to figure out what made it so special and make sure you mention the names of all staff that made it special also adding the time and date when you were there or received the service would be good as well!

so nice to hear someone write a letter of thanks instead of complaint

It's not that hard. Just explain what they did for you that you liked so much. Tell them you are very happy with them and that you will use them again. They will love getting it, no matter how it is worded. I've recieved a few in my time and it's always great.

ADD a little more money to the check and they will know you liked the service.

Mention the person that was particularly helpful. They should be acknowledged.
