OLD-FASHIONED RICE PUDDING

4-1/2 c. milk
½ c. uncooked long grain rice (not Minute rice)
1/3 c. sugar
½ tsp. salt, optional
1 tsp. vanilla
½ c. raisins
2 eggs, beaten
cinnamon

In a saucepan, combine milk, rice, sugar and salt; bring to a boil over medium heat, stirring constantly. Cook until you’re able to bite into a rice kernel and it’s cooked, but still a little firm. Add the beaten eggs. Pour into a greased 1-1/2 qt. baking dish. Cover, bake at 325° for 45 min. Stir every 15 min. Add raisins and vanilla; cover and bake for 15 min. more. Sprinkle with cinnamon if desired.

Chocolate Rice Pudding

Ingredients

3/4 cup uncooked white rice
1 1/4 cups water
1 1/2 cups milk
1/3 cup white sugar
1 teaspoon vanilla extract
1/3 cup raisins
1 tablespoon butter
2 tablespoons unsweetened cocoa

Directions
In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

In the top of a double boiler over simmering water, combine 1 1/2 cups cooked rice, milk, sugar, vanilla, raisins, butter and cocoa. Cook, stirring occasionally, until thickened, 20 to 30 minutes.

Rice Pudding

Use skim milk instead of whole milk to reduce fat and
calories.

6 cups water
2 cinnamon sticks
1 cup rice
3 cups skim milk
2/3 cup sugar
1/2 teaspoon salt

1. Put the water and cinnamon sticks into a medium
saucepan. Bring to a boil.

2. Stir in rice. Cook on low heat for 30 minutes until
rice is soft and water has evaporated.

3. Add skim milk, sugar, and salt. Cook for another 15
minutes until it thickens.

Yield: 5 servings

Cook 18 to 20 minutes, stirring occasionally, until rice is tender and all milk is absorbed; remove from heat. Cover and let stand 5 minutes. Stir in 1/2 cup milk. Serve warm or chilled. 6 servings

Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
