Ten Rules for Handling Food Safely
All employees must follow strict personal hygiene policies.
Potentially hazardous foods should be identified on the menu, and safe handling procedures should be established for each.
Food must be obtained from approved suppliers
Time/temperature abuse must be avoided when handling prepared foods.
Potentially hazardous raw foods must be kept separate from ready-to-eat foods.
Cross-contamination must be avoided: Establish handwashing guidelines. Wash, rinse and sanitize all food contact surfaces.
Foods must be cooked to recommended internal temperatures.
Hot foods should be held hot (140°F or greater) and cold foods held cold (41°F or lower).
Foods must be cooled from 140°F to 70°F in 2 hours or less and from 70°F to 41°F in 4 hours or less.
Leftovers must be heated to 165°F for at least 15 seconds within 2 hours. Leftovers only should be reheated once.

1) Wash your hands before eating.

2) Make sure nothing chemical such as a surface cleanser (or rat poison!) is nearby when preparing food.

3) Wash all vegetables and fruits thoroughly before consuming/make sure meat is thoroughly cooked- the temperature kills a lot of bacteria!

4) Brush or floss after eating to get bits of food out from between the teeth which can cause tooth decay and gum infections.

2. If handling cash and food make sure to use disposable latex gloves when handling food.
3. Keep hair tidy, whether long or short. Wear a hair net or cap or at least keep hair pinned up.
4. Make sure your clothes are clean. Yes, they do get food and grease spilled on them, but make sure you clean them daily.
