I need to make something that is quick and easy and something the guys will like. Also, I'd rather make something Americanish.

Try to bring something that can be served cool. I suggest something like a roasted corn salsa (see the first link below). If the barbeque is already going, why not make some rosemary vegetable kebabs (second link)? Instead of using regular wooden skewers, the vegetable pieces are pierced by a sturdy sprig of rosemary! These are really easy (look at the second recipe) yet very creative and unexpected. I suggest using some other vegetables (in addition to the ones suggested), like chopped eggplant (aka aubergine) and pieces of red and yellow peppers.

Wash some red potatoes depending on how many people you are preparing this dish for but these taste good even when reheating the next day.I use a five pound bag when preparing for a crowd.Do not bother removing the skins,partially mash potatoes then sprinkle with shredded cheddar cheese,place in 350 degree oven until cheese is melted,remove from the oven and spread sour cream on top,then sprinkle bacon bits and top with chopped green onions.

2/3 cup minced onion
1/3 cup minced green bell pepper
1/3 to 1/2 cup olive or canola oil
4 Idaho potatoes, peeled and diced
Salt and freshly ground pepper
In a large skillet cook the onion,and green pepper in 2 tablespoons of the oil over moderate heat, stirring occasionally, until vegetables are softened. Transfer vegetables to a bowl. In the skillet heat the remaining oil over moderately high heat until hot and add the potatoes. Saute, stirring occasionally, for 15 to 20 minutes, or until tender and crisp. Stir in the vegetable mixture and correct seasoning. Heat over moderately low heat until hot and serve.

Ok. Potato salad. I know, I know people make it all the time. Make yours stand out: To add a some heat use cayenne pepper. It will not only spice up the dish but will give color as well. Remember, a person eats with their eyes 1st! Make sure you add the cayenne before you finish the dish so it gets incorporated completely. You could also use the Indian spice curry. It will definitely make the dish stand out and you would be changing potato salad forever. "Curry Potato Salad".

Not quick but worth it!!! BBQ Green Beans. Dice and cook 6 pieces of bacon, add 1/2 c. white onion (til tender). Add 1 c. (or so) brown sugar, almost melt then add half a bottle or so of Red Gold Katchup. Add a big pinch of pepper then 5 cans, drained whole green beans. Bake 4 hours covered @ 350. If you try it, let me know how it goes!!!

This is a delicious potato salad for a summer meal or cookout, and it's one of my family's favorites.

INGREDIENTS:
4 to 5 cups cubed potatoes, cooked, drained
1/2 cup chopped celery
1/2 cup chopped red onion
3 hard-cooked eggs, chopped
2 tablespoons chopped sweet pickle
2 teaspoons sweet pickle juice
1/2 to 2/3 cup mayonnaise
1/2 to 1 teaspoon prepared mustard
1/4 to 1/2 teaspoon salt
1/8 teaspoon ground black pepper
PREPARATION:
Combine all ingredients in a bowl and stir gently to combine. Refrigerate until serving time.
Serves 4 to 6.

BETTER THAN SEX POTATOES
1- 320z Frozen hashbrowns southern style.
101/2 0z can cream of chicken soup
1- pint sour cream
2 cups shredded cheddar cheese
1/2 cup chopped green onions
1 tsp salt
1 tsp pepper
3/4 cup melted butter
2 cups crushed corn flakes
mix together hashbrowns, soup, sour cream,cheese,onions,salt,pepper and 1/2 cup melted butter

spread in a 9X13 pan

combine remaining melted butter with cornflakes and spread on top
Bake at 350 for one hour.

Pineapple Fluff (great stuff)

1 (8 oz.) cream cheese - softened
2/3 cup sugar
1 can crushed pineapple (do not drain)
1 (8 oz.) pkg Cool Whip - thawed
2 cups mini marshmellows
1 cup chopped nuts (optional)

Mix cream cheese and sugar until fluffy. Add pineapple. Mix well. Fold in Cool Whip and marshmellows. Add nuts. Store in airtight container. (If doubling, use 3 cream cheese and 1 large and 1 small container of Cool Whip)

Creamed corn casserole:

2 cans creamed corn
2 eggs
1/4 c. milk
16 saltines, crumbled
butter to dot top of casserole

Preheat oven to 350. Mix corn, eggs, milk, and saltines in a 9x9 baking dish. Dot top with butter. Bake for 45 minutes, or until top is slightly browned. This is my favorite dish at Thanksgiving, and I always bring this to pot lucks, and it disappears!!! SO YUMMY. Good luck!

Potato salad, macaroni salad, pasta salad
Pasta salad is good and easy to make. Use tricolour spiral noodles. Cut up red peppers, green peppers, red onion, mushrooms. Add to boiled and drained pasta. Toss in Zesty Italian dressing.
