i remember my Jewish Oma, rolling out strudel pastry '
she started out with a ball of pastry.
and hand pulled it till it lay flat
then she rolled it out so thin ( until you could read newsprint through it ).TOOK HOURS.

She had a very large table in the kitchen,
When she was satisfied it was rolled thin enough.
she cut the pastry into large 12 " squares and laid it between buttered paper .

then she made her strudel filling ( apples , nuts and Cinnamon + a very little sugar .
the squares of strudel pastry were buttered and laid on top of each other, about 6 -8 sheets .

putting a generous amount of filling on top,she then deftly rolled them into long parcels
then baked them to a .golden brown .

when out of the oven ,it was my job to dust them with icing sugar -- they smelled heavenly !

They were wonder full hot or cold .
I loved cooking with OMA

You can "cheat" these days, by using frozen filo pastry.
good, but not as good as my Oma's.
