Most blue vein cheese comes from Australia.. The best one is Tarago River Baw Baw Goat Blue. Tarago River Blue Orchid is enjoyable. Tarago River Gippsland Blue is best when purchased in whole wheels. And lastly, Tarago River Shadows of Blue is the creamiest.

Mold......and if you put those kinds of cheeses like bleu and gorgonzola under a microscope they actually move.....because of the enzymes!!! Now have a salad with bleu cheese dressing.

I think it is mould from the copper wires they insert into the cheese while it matures.
