If I return it to the wine cellar and rechill it later, will it lose any of the taste? It has not been opened at all. Please answer only if you really know! Thanks!

Yes. Just put it back in storage, and then back in the fridge to chill it before serving.

yes you can as it will slowly return to temprature ! its when wine is heated or cooled quickly that you may have a problem !
