Are you referring to a window unit for the air conditioner or is it central air?

The air conditioner itself will be fine but the bigger problem would be the sunlight pouring in through the window if it is a window unit. You want to store wine in a cool, dark, dry area so the air conditioner will cover the cool part and as long as there isn't an excessive amount of moisture in the room you're using to cellar the wine in you've got that area covered. You only need to deal with the dark component and if it's a window unit for the AC, you could have a problem. However, buy some dark curtains and that should help.
