"Like many naturally and artificially occurring toxins, ciguatoxin bioaccumulates, resulting in higher concentrations of the toxin at higher levels of the food chain. Predator species near the top of the food chain in tropical waters, such as barracuda, moray eel, and amberjack, are most likely to cause ciguatera poisoning, although many other species have been found to cause occasional outbreaks of ciguatera. Ciguatoxin is very heat-resistant, so ciguatoxin-laden fish cannot be detoxified by cooking."

However I do know many people who do eat it.

Never heard of anyone contracting ciguatera from AJ's, only from Barracudas. They have ciguatera testing kits available now, but the only downside is that there is no feasible way to release the fish if it in fact does have ciguatera, because the test takes a while to perform.

You can eat them, but depending on where you catch them, I'm not sure if you will want to after cleaning them.

For some reason, AJ's in the Atlantic have little spaghetti like worms in the meat, yet AJ's from the Gulf of Mexico do not have these parasites. Not sure about AJ's caught in the Pacific or other waters, but here in South Carolina, most of the AJ's have lots of worms, especially this time of year.

The meat is not affected by the parasites, but it kinda kills your appetite to see the worms all bundled up in the meat. But I like to eat them, the firm white flesh is almost as good as grouper. But I'm also crazy, so there ya go.

Amberjack is frequently eaten in restaraunts and sold in grocery stores. I once ate Amberjack fresh from the ocean and it was one of the best fish I've ever tasted.

I've tried eating one that I caught in the past and did not care for it. It has a strong fish taste which could be eliminated if you cut the dark red flesh away. Cutting all the red away makes it ok, but there is not much left.
