Hello all,
A couple years ago at Thanksgiving, I made a recipe for cornbread that was phenominal! Since this was so long ago, I no longer have the recipe. I've searched all the recipe sites I usually go to (www.allrecipes.com, www.cooks.com and www.foodtv.com) and can't find the exact recipe.
The one I made had a box of Jiffy cornbread mix, sour cream, and creamed corn (among other things). All the recipes I've found call for self-rising corn mean...I can't find anything with Jiffy in it! If anyone has this recipe, or has a better way of searching for it, please let me know a.s.a.p.! Thanks so much!

CORN CASSEROLE
1 can whole kernel corn
1 can creamed style corn
1 stick butter, melted
2 eggs, beaten
1 box Jiffy cornbread mix
1 (8 oz.) sour cream or nonfat yogurt
Melt the stick of butter in the casserole dish. Empty all of the ingredients in the casserole dish and mix. Bake at 350 degrees for 1 hour.

2 boxes (9 oz. each) Jiffy cornbread mix
8 oz. sour cream
2 beaten eggs
1 can corn niblets
1 can creamed corn
1 stick butter, melted
Grease 13 x 9 pan. Mix eggs, corn, sour cream. Add cornbread mix and butter. Mix well. Pour into pan. Bake at 350 degrees for 35 to 40 minutes.
For something extra good add shredded cheddar cheese and some chopped jalapenos!

Don't be a slave to a recipe. You know the basic ingredients, right? Try them with any cornbread mix.
I like Aunt Jemima cornbread mix, 1 can of cream corn, 1 can of whole corn, sour cream, pimentoes, halipenoes, and velveeta. Of course, you want to follow the basics on the package in terms of eggs and oil, but adjust the milk according to the consistency that you want because you have added semi-liquids.
Mix and match according to your own likes, and you will come up with your OWN great recipe!!!

you could find a box of jiffy cornbread and see if they got it on their box or go to their website. Or just type in search engine like yahoo or google and type in
'cornbread recipes " and see what that comes up with. Hope this is helpful

Amy's Cornbread Recipe
Recipe serves:
Recipe Ingredients:
1 pk Frozen Broccoli
2 c Grated Cheddar Sharp Cheese
1 Medium Onion, Chopped
1 Box Jiffy Cornbread Mix
--------------------------------------------------------------------------------
Recipe Instructions:
Bake in glass pan for 25-30 minutes in preheated 400F oven.

1 can whole kernel corn with juice (15.25 oz.)
1 package of Jiffy corn muffin mix
1 stick of butter, melted
2 eggs, beaten
1 cup of sour cream
¼ cup of sugar, optional
Directions:
Mix all of the ingredients together. Pour into a greased casserole dish. Bake at 350 degrees for 1 hour.
