I call this "Grown Up Grilled Cheese" and it's my absolute favorite - and super simple. The hardest part is finding the right ingredients. You need thinly sliced prosciutto (a cured Italian ham), Jarlsberg cheese (a stronger flavored Swiss style cheese), and light rye bread.
I put cheese on both sides of the prosciutto, and I use just a thin slice, maybe two, of the prosciutto. You can butter the bread, if you like, or be lazy like me and put a pat on the griddle and swirl it around until it's melted. Put a second pat down when you turn them.
Cook in a frying pan or on a griddle over medium low heat for a couple of minutes on each side, until the cheese is melted and the bread is golden brown.

I'm tired of sandwiches after 10 months of school. How about a wrap? Place wrap on a plate and spread with spreadable cream cheese. Spread antipasto on this and roll up. Cut into half inch wheels. These are great.
