The Shengen zone is intended to support the free movement of citizens and free movement of labour of the participating countries. It is not primarily aimed at visitors, because visa requriements for citizens of non Shengen countries can vary from country to country. For this reason, if you are not visiting lots of countries you may well be better off obtaining visas for the countries you are visiting individually. Note that the UK is NOT a Shengen country.

You do not have to provide details of your travels, but you do have to prove funds for them and have an entry and exit ticket. This means you should apply for your visa from the consulate of the first country you plan to visit (and it will be easier if you also plan to leave from this country).
