Any time you need a substitute for corn syrup, mix 1 1/2 cups sugar and 1/4 cup water. This will make 1 cup corn syrup substitute. Hope this helps.

You can mix 2 cups sugar with about 1 -1.5 cups water. Let this boil on the stove for about 30 minutes. Let it cool and use as corn syrup. Good luck and have fun baking!

If you want to throw in a yummy twist to your brittle try maple syrup it will give the recipe a lotta depth and it is a direct 1 to 1 replacement for your corn syrup. Wish I was there, I love brittle. One other trick I do is smash up a HEATH BAR ( the butter toffee ones) and add that to the nuts when I measure them. Bon Appitit!
