You save the top cake for your first anniversary. Make sure you wrap it very well and put it in the freezer. How & when you decide to cut the cake is up to you. This is one of the many traditions that you and your hubby will set for yourselves in your long, healthy, prosperous life together.
Example: I cut my cake and shared it with my mother, grandmother and husband in my mom's kitchen. We talked and shared our engagement & wedding memories in a very informal setting. To this day, I cherish that moment.

The tradition is you freeze the top layer and eat it on your first anniversary. However, most cakes don't freeze and thaw that well. Fruit cake seems to be the exception to this rule but not many people choose fruit cake now for their wedding cake because it's so heavy. You can try freezing it but it might not work. Some of the bakeries I work with as a wedding planner offer a re-creation of the top layer for the first anniversary, either included with the original cake purchase or at a discounted rate. Check to see if the bakery you used offers something like this just in case your top layer doesn't freeze and thaw all that well.

to reiterate what has already been said, you freeze it and eat it with your husband and whoever else is special to you (parents, wedding party friends, etc) on your first anniversary.
if you choose to do this, there is a particular way to wrap it so it will taste excellent. you will need to purchase wax paper and a full roll of heavy duty aluminum foil. first, wrap the layer in wax paper (enough so it is completely covered). then, take the aluminum foil and start wrapping....a few times one way, then a few times the other. keep cris-crossing like that until you use the ENTIRE roll. then stick in the freezer and you are done.
i shared my cake on our first anniversary with a small celebration with my parents, aunt & uncle, and my brother and his finacee. the cake tasted great weirdly enough! just be sure you completely thaw it out a day or so beforehand. :)
i know it is a strange tradition, but i have great memories of our first anniversary and i did not have to go out and buy a dessert!

On the first year of your anniversary you eat the top of your wedding cake but you should freeze it and wrap it well so it wont get freezer burn.
