Here is a couple of dinner ideas that may appeal to kids and are fairly cheap and healthy. The old standard beanie weenie can be fixed up. Buy hot dogs only when on sale, and in bulk when possible. Heat a very large can of Campbell's pork and beans and to it add two tablespoons of brown sugar or regular sugar, A little BBQ sauce, some finely diced onion, garlic powder and pepper. Add sliced hot dogs and cook and stir until hot. Serve with garlic bread or what ever bread You have, or with a pasta like macaroni for example. Kids love pizza but tomato bread is cheaper and tastes good. use sturdy white bread slices or Italian bread slices, or french roll halves, what ever is on sale and cheap, Spread a little tomato sauce on the bread then top with Parmesan cheese, oregano, very thin sliced or diced tomatoes, and shredded mozzarella cheese. Bake at 400 degrees until bread is toasted and cheese is melted. This is a recipe made for a budget and appropriately called Slum Goo, but tastes better than it sounds. Cook a pound of ground beef and drain excess fat. Cook a pound of macaroni, drain and add a little olive oil, or vegetable oil like Canola. To the beef add a very small amount of olive oil if desired. Then a diced onion. cook and stir until onion is tender. Add a 16 oz. can of crushed tomatoes or whole tomatoes chopped up. Some salt, pepper, and garlic powder. Cook and stir until hot, then add to macaroni. Heat and stir for a short time until macaroni is hot.

Make sure you let your kids help prepare their food, they'll usually eat anything they've had a hand in. I have a couple of picky eaters, so I give them a multivitamin first and foremost. I focus on the foods they will eat, and try to make the ones that they won't eat more palatable (for example, it's okay to give them a little chocolate sauce or whipped cream to dip certain fruits in if they won't normally eat those...just not too much...and ranch dressing for veggies). They always like their sandwiches cut in fun shapes (use a cookie cutter for that). My kids love eating breakfast for dinner -- so sometimes I'll give them eggs and whole-wheat pancakes, something like that. I've even let them have cereal for dinner, as long as it's a relatively healthy one and they'll eat some fruit and yogurt with it. As for recipes, it just really depends upon what your children's tastes are, but just try to stay away from processed foods like chicken nuggets. One thing I like to do is get those flash-frozen chicken strips at someplace like Sam's or Costco (they come in a big bag). They cook really fast in the microwave or in the oven. Add some sweet corn on the side, and whatever green vegetable they'll eat.

Try getting your kids to help with the preparation - they'll eat a lot of stuff they wouldn't normally touch if they "made" it themselves. Just have them do age-appropriate tasks - no sharp knives for the little ones, keep them away from the stove, etc. You can get special knives for kids that aren't pointed or too sharp. Making grilled cheese? Have them butter the bread. Spaghetti? They can break the pasta into smaller pieces. Want them to try veggies? Have them hull fresh peas, or peel carrots, or cut up broccoli "trees." They can stir the pancake batter or make biscuits with their hands (wash thoroughly first, and no tasting!). Have them grate some cheese over whatever you're serving - kids LOVE cheese. Try different varieties - not just plastic american "cheese" like velveeta. Try a little parmesan or cheddar or provolone over chicken, vegetables, even rice.

Make homemade pizzas and let the kids put on their favorite ingredients. To jazz up hot dogs buy the crescent roll dough in the tube and wrap a piece around each dog with a slice of cheese and bake in the oven. Breakfast food is great for lunches and dinner...pancakes, scrambled eggs with cheese, sausage, etc. Mac n cheese is usually a kid favorite and you can add veggies to eat to make it a little healthier.

Taco chips (generic or brand name) with refried beans (in a can at the store), shredded cheese, and if you like offer a little diced tomatoe or lettuce. Depends on the children's age. This is healthy.
