Melt the chocolate in a bowl over simmering water, don't use the microwave, it's too hot. When the chocolate is melted, dip the strawberries in then put them on a non-stick baking sheet and refrigerate them till the chocolate has set.

The first step is to take 2 big choclate bars then put then in a heatably bowl then bowl some water and put the bowl on top of the water make sure the water doesnt touch the bowl then u have to add choclate cut in pieces with 1 1/2 stick of butter when it turns liquidy take the bowl out anf rinse strawberried make sure they are dry before you dip them then dip the strawberrie in the choclate and let it sit in the refriegerator for 30 min.

Make sure the strawberries are completely dry. Do not wash them.
The strawberries should be room temperature. Lay them flat on a tea towel on the counter for a couple of hours before you dip them.

Clumpiness is also a sign of over cooking. You could try using a double boiler pan. I also have had success in using a microwave.

Ive used a product for grocery store that usually in in the fruit aisle just for that purpose. Its in a plasic container,all you do is wash the strawberrys and let them dry and then dip them. Good luck!

Buy the Baker's Chocolate that comes in a little container. Then nuke it and dip the berries in.....that's the best way I've done it.
