QUICK AND EASY PEACH COBBLER
1 lg. can peaches, drain most of syrup
Bisquick, fill half of dish with Bisquick
1 stick of butter and 1/4 stick
3/4 c. hot water
1 c. sugar
Cinnamon to taste
Use a 9 x 3/4 x 9 3/4 x 2 inch pan. Mix Bisquick, butter and hot water together. Add peaches. Add 1/4 stick more butter (cut and put slices on top). Add cinnamon and sugar. Bake at 350 degrees for 35 minutes or until golden brown. May add chopped nuts if desired. Add vanilla ice cream on top when warm if desired.

No need to thicken peaches in a cobbler...The gluten in the flour used for the crust will react with the syrup while cooking and thicken it naturally.
Easy recipe that's kewl:
Use a BOXED BISCUIT MIX....Follow the directions for PANCAKE BATTER ( Seriously!! )
Place peaches in baking dish...Add small amount of sugar and cinnamon to taste...Pour pancake batter over peaches... Preheat oven to 375, bake until golden brown on top...20-30 mins...

If you really want to thicken any fruit, try Clear Jel. It is manufactured by Barry Farm. I use it when canning fruits to use in cobblers and pies. It's great and does not add a flavor to your recipe.

use a bit of corn starch in some water & make a slurry....you might want to heat it a bit, but I'd say that the heat from the oven when you bake it might be enough
