whats a good, delicious appetizer to bring to a mexican fiesta? I'm not savvy in the kitchen. :-(

guacamole

2 ripe avocados
1 small onion
1 clove garlic
1 small tomato
1 1/2 Tbsp lime juice (or juice of 1 fresh lime)
salt and pepper to taste


Peel avocados and remove the pit (see below for a neat idea on how to use the pits)

Peel and mince the onion and the garlic

Chop the tomato.

Mash the avocado in a bowl (fun for the kids) and then stir in the remaining ingredients.

Serve cold with tortillas

A MEXICAN BEAN DIP

What you need:depending on how many people to serve
1can of beans-Roserita or Taco Bell beans
some shredded lettuce
some cheese/grated
tomatoes/diced
onions/diced
sour cream/ not alot
olives
salsa/doesn't matter any kind
and a bag of tortilla chips
You put every thing in a layer in order that I have here. Than warm everyting in the oven until cheese barely starts to melt

Sausage-Stuffed Jalepenos 1 pound bulk pork sausage 1 package (8 ounces) cream cheese, softened 1 cup (4 ounces) shredded Parmesan cheese 22 large jalapeno peppers, halved lengthwise and seeded* Ranch salad dressing, optional In a large skillet, cook the sausage over medium heat until no longer pink; drain. In a small mixing bowl, combine the cream cheese and Parmesan cheese; fold in sausage. Spoon about 1 tablespoonful into each jalapeno half. Place in two ungreased 13-in. x 9-in. x 2-in. baking dishes. Bake, uncovered, at 425° F for 15-20 minutes or until filling is lightly browned and bubbly. Serve with ranch dressing if desired. *Editor's Note: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face. **Note: I use this recipe for parties all the time and I also make this up, separate and freeze it. Then when I want just a few for dinner I buy 2-3 jalepenos and fix it.. Antojitos (Appetizers) 4 (12 inch) flour tortillas 3 ounces shredded white Cheddar cheese 3 ounces shredded Monterey Jack cheese 3 ounces shredded Cheddar cheese 1 tomato, diced 1 cup chopped red bell pepper 1/8 cup chopped green onions 1/3 cup black beans, drained 2 tablespoons hot salsa 1/8 teaspoon chili powder Preheat oven to 425 degrees. Lightly grease two 12 cup muffin pans. Cut each tortilla into 6 smaller round pieces. Insert the pieces into the muffin tin cups. Arrange the white Cheddar cheese, Monterey Jack cheese, Cheddar cheese, tomato, red bell pepper, green onions, black beans, hot salsa and chili powder in the cups as desired. Nachos and a great salsa. You can buy it, of course. Or you can make your own easily with some tomatoes, cilantro, onions, etc. There are some really easy cream cheese dip recipes, too. (Cream cheese on the bottom, frozen chili next, cheddar cheese on top... bake until it's all melted together and the chili is heated).

There's to easy ways to do it :
GUACAMOLE:
Avocado, peel it and smash it.
Then pour an envelope of "Guacamole Aid" (something like that, it don't remember the exact name) , you can find it usually hanging besides de avocados. (at kroger).
And of course corn chips.

The other one, not very common on the States but very common on fancy mexican parties over there its:
I bar of philadephia cheese
1 can of Herdez Salsa Casera, or any salsa you prefer.
Put the cheese bar on a plate, pour the salsa over it. Put ritz crackers around.

Mini tostada's. Use the round corn chips, spread on refried beans [or bean dip] shredded cheese, shredded lettuce and salsa.

or super easy. Poo dip. 1 can beanless chili and 1 package cream cheese. Melt together on the stove. It is a favorite of everyone I know

1 can of Hormel Chili without beans
1 8oz Philadelphia cream cheese

Heat, stirring until cheese is melted.

Serve with Tostido Scoops.
