Need a dessert recipe to feed about 30 men. These guys are vets, so there is a variety of ages. Need something the elders won't have to struggle with, but something yummy too.

I found this on allrecipes.com and sized it up for 40 hope it helps
Cheese Cake Cups

Yields: 40 servings
"Cupcakes with a vanilla wafer crust and a sweetened cream cheese top."
INGREDIENTS:
40 vanilla wafer cookies
5 (8 ounce) packages cream
cheese, softened
1-3/4 cups and 2 tablespoons

white sugar
5 eggs
2-1/2 teaspoons vanilla extract
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Line muffin pans with cupcake papers.
2. Place one wafer cookie in the bottom of each cupcake paper. In a medium bowl, cream together cream cheese and sugar. Beat in eggs and vanilla until smooth. Pour over wafers in cupcake papers.
3. Bake in preheated oven 15 minutes, until golden and set.

You might have to make two pans of this but it is easy and good.

1 large package of Vanilla Pudding (Cooked)
1 Box of graham crackers
1 can of already prepared chocolate icing

Prepare the pudding using a little less milk (makes it a little thicker) Cool

In a 9 1/2 x 11 pan layer graham crackers, then layer of pudding, then more graham crackers, then rest of pudding and follow by third layer of graham crackers. Refrigerate...about 1 hour later, warm the icing in the microwave until pourable and pour over the layered dish, spread carefully. Refrigerate for several more hours and then serve with some whipped topping once served. The graham crackers get soft and it really is a hit at work...easy to make and you can substitute with different kinds of pudding if you want or icing..this would be easy to eat for those vets with difficulty chewing and as I said you may have to double the recipe since you are feeding 30 people.

I've been making this recipe for many years. It's so yummy and refreshing and so easy to make. Thank goodness I found it at all recipes to customize the amount of servings . I entered it for 30 servings. If you need to add more servings, go back to the link below.

Original recipe makes 10 (change)
INGREDIENTS:
3 (20 ounce) cans crushed pineapple, undrained
1/2 cup and 1 tablespoon white sugar
3 (6 ounce) packages orange flavored gelatin
6 cups buttermilk
3 (8 ounce) containers frozen whipped topping, thawed
DIRECTIONS:
Mix pineapple and sugar together in a medium saucepan, and bring to a low boil, stirring occasionally. Stir in gelatin until completely dissolved, remove from heat, and cool to room temperature. Add buttermilk, and refrigerate 1 hour, or until partially set.
Gently fold in whipped topping. Pour mixture into a lightly oiled gelatin mold. Refrigerate 8 hours, or until completely set.

Oh my God. I have THEEE best recipe for you! I have never had anything like it, even though it sounds like it's a boring, every day traditional dessert. Just try it sometime. You'll be amazed, I promise!! Heat oven to 350. In a square baking dish place 1 stick butter and melt in oven. Mix batter with hand mixer: 1 cup sugar 3/4 cup flour 1/4 teaspoon salt 2 teaspoons baking powder 3/4 cup milk When butter is melted remove from oven and put 1 cup of raspberries and 1 cup of blueberries on top of butter. Dont mix. Pour batter on top of berries and butter. Dont mix. Bake for about 1/2 hour until top is golden brown.

get a package brownie mix and substitute some of the liquid for Kahluah.

Deluxe Caramel Corn
Way Better Than Crackerjack
Pop 4-6 quarts of your favorite popcorn and place in a large buttered roaster. Preheat oven to 200 degrees, put the popcorn in the oven while you make the syrup.
In a deep pot, stir together constantly while heating, then boil together at a full boil for 5 minutes without stirring:

1/2 cup (1 stick) butter
1 cup brown sugar
1 cup honey OR corn syrup
Remove syrup from heat, stir in:
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1-2 cups toasted pecans, almond slices or other choice nuts
Syrup will foam high when you add the soda. Stir down and as it cools slightly, pour in a thin stream all over the popcorn. Stir in well with two large spoons or gloved hands, this stuff is HOT*HOT*HOT. Put the well mixed popcorn in its roaster into the oven uncovered, increase temperature to 250 degrees. Stir thoroughly every 15 minutes for 1 hour 15 minutes. Break apart and cool before eating or storing.

The best recipe I have ever had. Doesnt sound too incredible, but my mouth couldnt believe the experience!!

Mix 1 cup sugar, 3/4 cup flour, 2 tsp. baking powder, and 3/4 cup milk.

In a square baking dish melt 1 stick butter in the oven at 350.

Put two cups of fruit (we use berries) on top of butter (dont mix). Pour batter on top of fruit (dont mix). Bake about 1/2 hour until golden.

We serve it with home made whipped cream.

Even if you dont use this for your men, you should make it for YOU. You wont believe it!

A real easy and quick treat is to take angle food cake and cut into bite size cubes, and layer in a deep bowl with fresh berries of any kind and chocolate pudding, layer of cake layer of fruit, layer of pudding, and repete until bowl is full. Serve with whipped cream on top. another hint is that you can use Jello brand sugar-free pudding especially if you are serving to older people who may have dietary restrictions. Most people can not tell when I use sugar-free in this dish, because of the angel food cake and the fruit. And you can even use vanilla pudding. I usually use 3 packages of pudding to one cake and the fruit you can just add as much or as little as you like

Take this recipe times five or six:

Angel food cake, split into three layers

large can crushed pineapple, juice included
one cup cool whip
one package of instant vanilla pudding mix

Mix fruit & pudding mix, fold in cool whip

Spread mixture between layers & top cake - divide the filling into thirds. Chill one hour.

Never heard of anyone going wrong with a good ol' tray of brownies. Easy to make in large batches too. Have fun!

i make a yummy dessert using
one large tub of whipped cream
one large tub of a sweet yogurt
one large tub of fresh fruit of your choice chopped
one large bag of marshmallows

mix all together and let sit for 3 hour in tbe fridge
