Since some guests enjoy more small lizards than others, I would abandon the tossed lizard salad concept, and go with a covered condiment dish with small ladle to offer to the diners so that they can add the lively amphibians just before eating.

The hardware store sells titanium string. They can't bite or chew through it. Tie the little suckers up with really good knots and anchor them to the cuttlery OR try little tiny handcuffs.....BUT if all else fails, submerge them in vodka and after they go to sleep, lay them carefully into the salad greens.... hummmmmm, you didn't get this recipe from Emeril live did you?????

I usually chill my lizards before affing to the salad. This makes them sleepy. They don't get lively until they warm up a bit.
