I made a really good thing for mother's day, but I want to make something different so can you help?

he cant have anything with lettuce, seeds, or a lot of salt and seasoning. he isn't on a big diet, overlooking those few items.

Good Option:

Pancakes, Bacon, Maple Syrup, Eggs, Fresh Fruit, Coffee, Milk, and Juice.

The old favorites are always nice..

Want something more complex? Do Omelets with Portebllo Mushroom, Red Onions, Jack Cheese.. some Ham or Sausage, and fresh strawberries with clotted or whipped cream.. and of course some kinda drink.

Ham and Cheese Stratta

Introduction
I prepared this for breakfast last Christmas.Tucked into the fridge the night before, next to a melon salad with vanilla syrup . In the morning it baked while my daughter and I opened our gifts.Change the add ins to suit your taste. I like to add sauteed mushrooms to this strata. Bacon and chedder cheese are also delicious.

Ingredients
6 thick slices white bread (sliced challah bread works great if you can find it)
Soft butter
6 eggs
2 cups half and half (milk works fine also)
1 cup shredded parmesan
1/2 tsp salt
3 cups diced ham
1 1/2 cups shredded Guyer cheese (classical) But I like Fontina for it's wonderful flavor and melting properties. Sliced cheese can also be used.



Note: If I can't find the thick sliced bread, I make 2 layers of regular sandwich bread.

Directions
Step: 1 Remove crusts from bread and spread each side with butter.
Place bread in a buttered 13x9-inch dish.Cut the bread slices to fit the pan if needed to make a flat layer. Set aside.Dice ham and sprinkle over bread.Scatter cheese's over the ham.
Beat eggs, cream and salt together with a whisk.Pour over ingredients in baking dish.
Cover and chill overnight or make in the morning and chill all day if serving as a supper dish.
Bake in preheated 350 degree oven for 30 to 35 minutes or until a knife inserted in the center comes out clean .Serve immediately. leftovers reheat well.



Note: Individual stratas are easy and impressive. I use my 6 oz ramekins and cut the bread with a cookie cutter to fit the ramekin. Assemble as usual.Place the ramekins on a cookie sheet to put in the fridge and then the oven.

Hollandaise sauce:
1 stick (4 ounces) butter, sliced
4 egg yolks
1 lemon, juiced
Lobster roe (orange immature lobster eggs, availability depends on the luck of the lobster)
1 tablespoon butter
1 (1 1/2 pound) lobster, cooked and shelled (a good way to use leftovers from shore dinner!)
10 slices, about 1/2 pound, Canadian bacon
5 English muffins, split
10 eggs
Minced fresh parsley
Paprika
Melt half of the butter in top of double boiler over hot, but not boiling, water. Add egg yolks while stirring. Add remaining butter and stir until melted, keeping heat low under double boiler. Crumble lobster roe as finely as possible and stir into sauce. Add lemon juice slowly. Set aside and keep warm. Sauce will thicken as rest of dish is prepared.
In a skillet melt 1 tablespoon butter. Dice the cooked lobster meat and saute quickly in the melted butter to heat through. Remove to a bowl and keep warm.
Brown the Canadian bacon in the same skillet and keep warm. Toast the split English muffins.
Poach the eggs for about 3 minutes in an egg poacher, or in skillet of water with a tablespoon of vinegar added. Whites and edge of yolks should be set, center of yolk still liquid.
For each serving, place 2 toasted muffin halves on a plate and carefully layer on lobster meat, Canadian bacon slices, and poached eggs. Cover with Hollandaise sauce. Garnish with minced fresh parsley and paprika.

I don't know if your Father is a big eater, on a diet or what. More
information would have helped. However, what about, french toast, sausage links and a sliced banana. Or you can buy a can
of cherry pie filling and spread that on top of the french toast. I have had it and it is delicious!! Put a dab of whipped cream on top just for good measure.

Might I suggest some gourmet baked beans, with a little Grey Poupon Dijon Mustard. That should keep Papa toot'n most of the day.

well it really depends on the favorites of your father but heres some ideas:-eggs and hash browns-cut potatoe into small cubes
depending on how much the no of people you want to serve and the size of your potato-3-4 baking potatoes for 5-6 or 2 for 3people put into heated oil(oil heated under small flame so as not to sizzle too much) cook unto beginning to brown -turn several times-you can add onion,chives,grated cheese and some salt and pepper-slowly add 2-3 or 5-6 scrambled eggs(add some milto eggs while you're scrambling to make them fluffy) cook this mixture until eggs are done(cook under medium to low heat) can serve with toast and your dad's favorite jam or english muffins with jam. the egg and cubed potatoe mixture can be cooked infrying skillet(pan) Can also serve with sausage or bacon depending on which he prefers-preferably turkey to show you care for his health and to make it easy get microwaveable kind or again in skillet-whichever you prefer. NO 2. make pancakes from mix and instead of the regular syrup make it special by putting unfrozed strawberries with juice on top of pancakes with just a touch of whipped cream on top or you can make crepes--mix flour with milk until batter is similar in consistency to pancake batter make sure not lumpy-cook just like you do pancakes-turn when edges start to brown and not runny in the middle once done take out of skillet until you've done enought for father or family. Take crepe lay out flat and spoon canned fruit fillings(the kind one uses to make pies) iand pspread over crepe then roll crpe .You can dust the entire rolled crepe lightly with powdered sugar. I think its not so much what you fix but that whatever you make it well that it tastes good-make your dad's place special with card and flower by his plate or dress table up with pretty tablecloth-if fixing him a tray use nice plate arrange silverware-put card with flower either at side or top of plate depending on the room you have on the tray- and present with love and then it doesn't matter even if its just cereal.
